Job Summary:

Marine Room, a vibrant and soulful restaurant inspired by the abundant offerings of the sea, seeks a dedicated and experienced Restaurant Assistant Manager with sommelier experience. Our ideal candidate will ensure an exceptional dining experience while driving profitability and maintaining a safe and clean environment. This role requires strong leadership to develop a team and uphold the highest service standards.


Ideal Candidate:

  • A sommelier or individual with extensive wine knowledge and sales experience seeking to advance into restaurant management.
  • Must be able to work 45+ hours per week.
  • Willing to work in the restaurant 6 evenings per week, with daytime hours and onsite shifts from 3:30 pm to close on some nights and 3:30 pm to 10:00 pm on others.
  • Strong mathematical skills and the ability to solve problems quickly.
  • Highly organized and detail oriented.
  • Thrives under pressure and excels in problem-solving.
  • Excellent teamwork and interpersonal skills.
  • Skilled at deescalating conflicts and maintaining a positive environment.


Key Responsibilities:

  • Execute and train staff on the 'Sequence of Service' flawlessly.
  • Develop and implement digital marketing strategies, recognizing content opportunities.
  • Maintain health and safety standards, ensuring a clean and safe environment.
  • Oversee daily operations, manage expenditures within budget, and provide feedback to the Executive Committee.
  • Collaborate with management on all F&B operations, including programming, bookings, and hiring.
  • Manage guest service standards, product quality, inventory, cost controls, and marketing.
  • Resolve customer complaints, maintaining high satisfaction levels.
  • Manage cash transactions and personal banks.
  • Implement emergency procedures and train security staff.
  • Perform other duties as assigned by management.
  • Handle human resources functions including hiring, training, and employee development.


Qualifications & Standards:

  • Minimum 5 years’ experience in the Front of House of a Fine Dining Restaurant.
  • Sommelier experience with Level 1 Sommelier or Level 2 or greater WSET or similar certification.
  • Excellent customer service skills with attention to detail.
  • Ability to lead and motivate staff, with a lead-from-the-front mindset.
  • Strong organizational and interpersonal skills.
  • Flexibility to work late nights and a variable schedule.
  • Proficient in Microsoft Office and restaurant POS software.
  • Fluent in English, with strong communication and literacy skills.
  • Ability to handle confidential information discretely.


Physical Demands & Hours:

  • Willing to work 45+ hours per week, including 6 evenings.
  • Onsite hours from 3:30 pm – Close some nights and 3:30 pm to 10:00 pm others.
  • Must be able to stand, lift, push, pull, and carry tasks within assigned departments.
  • Excellent speech communication and literacy skills required.
  • Ability to drive as necessary.
