Senior Bread Baker

Le Beau is seeking an experienced Bread Baker to join our team and uphold our tradition of crafting exceptional baked goods.
This full-time position requires a minimum of 40 hours per week, starting at 4:00 AM, from Monday -Friday at 405 Cherry Street. Candidates must have hands-on experience baking bread from scratch, from mixing raw ingredients to producing high-quality artisanal loaves. The schedule might change based on business needs.
Key Responsibilities:
· Produce a wide range of breads entirely from scratch—from reviewing recipes and scaling ingredients to mixing dough using foundational components such as flour, yeast, water, eggs, butter, and other essential ingredients.
· Execute traditional European bread techniques, with strong proficiency in sourdough, baguettes, focaccia, ciabatta, brioche, pain de campagne, pain de mie, and fougasse. Experience with lamination and croissant production is considered a strong asset.
· Ensure consistent product quality by monitoring fermentation, dough structure, shaping, proofing, and baking.
· Manage daily bread production with efficiency and accuracy in a fast-paced kitchen environment.
· Collaborate closely with team members to meet production targets and maintain smooth bakery operations.
· Follow health, safety, and sanitation protocols, keeping the production area clean, organized, and compliant with industry standards.
Qualifications:
· 3-5 years of professional bakery experience with a focus on scratch baking. Candidates must have hands-on experience baking bread from scratch. Unfortunately, experience limited to working with frozen dough does not meet the requirements for this role.
· Experience with traditional bread recipes and fermentation techniques, especially sourdough and other artisanal breads.
· Experience with lamination and croissants production is a bonus.
· Valid Food Handler Certificate is required.
· A true passion for bread making and a keen eye for detail.
· Strong work ethic and ability to work well in a fast-paced, high-pressure environment.
· Availability to start work at 4:00 AM and commit to a full-time schedule.
· Excellent communication and teamwork skills.
