The Opportunity

Pizzaiolo is one of the GTA's most beloved quick-service restaurant brands, serving authentic pizza across 75 locations. With strong brand loyalty, deep community roots, and ambitious growth plans, the business is entering its next phase — modernizing operations while preparing to scale across Ontario and beyond.

To lead this transformation, Pizzaiolo is seeking a Chief Operating Officer (COO).

The Role

Reporting to Founder & President Luigi Petrella, the COO will build the operational foundation required to support consistent performance today and scalable growth tomorrow.

This role carries a dual mandate:

  • Strengthen and standardize operations across the existing franchise network

  • Design and execute the operating model that enables future expansion

The COO will oversee operations, supply chain, franchise performance, technology adoption, and new store development, acting as both a hands-on builder and strategic growth leader.

Key Responsibilities

  • Develop and implement a unified operational playbook and SOPs across all locations

  • Drive consistency in food quality, service standards, and customer experience

  • Lead the introduction of modern QSR systems, data, and performance dashboards

  • Oversee supply chain, vendor partnerships, and quality control

  • Strengthen franchisee relationships while ensuring accountability to brand standards

  • Lead site selection, construction, and new store development

  • Build and lead a high-performing operations and franchise support team

The Ideal Candidate

  • Proven senior operating leader with experience scaling multi-site QSR, retail, or hospitality businesses

  • Strong builder mindset with experience creating operational systems, playbooks, and scalable processes
