What You'll Do

Supervision

  • Responsible for computer menu programming.
  • Assists with the coordination of Clubhouse maintenance with NPC Maintenance Department.
  • Assists in updating content and redesigning the Restaurant and Banquet menus.
  • Responsible for Clubhouse security and alarm system.
  • Organizes and conducts monthly and annual inventory audits. Completes inventory spreadsheets for approval.
  • Assists with the ordering of stock to ensure adequate levels of supplies are available.
  • Attends and participates in management meetings, as requested.
  • In the absence of the Manager, the Seasonal Supervisor is responsible for other duties to ensure the Restaurant operates smoothly.

Food and Beverage Supervision

  • Under the general supervision of the Clubhouse Manager and within established policies and procedures, oversees and directs all aspects of the Dining Room operations by ensuring all workers comply with NPC quality standards, Occupational Health and Safety Act, First Aid, WHMIS, LCBO
  • Regulations, Recycling Program and established policies and procedures.
  • Assists in Banquet / Tournament setups.
  • Oversees the execution of food service for various Banquets and Tournaments; coordinates presentation and timing with Chef and Tournament / Banquet Coordinator.
  • Prepares Tournament / Banquet invoices to presented to guest for services rendered.
  • Processes payment for Tournaments / Banquets, calculates and enters gratuity breakdown.
  • Monitors staff to ensure guests receive prompt and courteous service as well as appropriate recognition (VIP, repeat customers, directors, commissioners etc.).
  • Addresses customer complaints, resolves to guests satisfaction and provides a follow up report and corrective measures.
  • Monitors traffic flow in Restaurant to ensure maximum table turnover and revenues without affecting the quality of service.
  • Identify training needs for staff, develop and recommend formal training plans to Manager and implement approved programs.
  • Responsible for and coordinates money pickup for Food and Golf, conducts cash audits and is accountable for any cash discrepancies. Follows store security procedures for handling revenue and money pick up from Police.
  • Responsible for totaling and verifying return sheets with the Cash Terminal Readings and verifying Cashier's Cash Audit Sheet.
  • Prepares daily time cards, records data on Daily Station Sheets and Productivity Worksheet.
  • Responsible for filling out various reports, including Accident Reports and Incident Reports on their scheduled shift.
  • Responsible for ensuring appropriate standards of employee conduct, dress, hygiene, uniforms and appearance are being followed.
  • Supervises the janitorial staff; conducts janitorial training sessions; and monitors daily duties.
  • Discuss any operational problems with Manager.

Operational

  • Schedules pre-meal meetings with Chef / Kitchen Supervisor and Serving Staff, ensuring all staff is aware of daily features, special groups, and any special requests.
  • Makes routine inspections of the work area, including side stations, bar area, buffet, and kitchen.
  • Ensures availability of supplies for adequate service (i.e. silverware, china, menus).
  • Required to work weekends, shift work and holidays.
  • Promote a positive image of the Niagara Parks Commission; provide the guests with information regarding all Niagara Falls Attractions.

Food and Beverage Administrative

  • Provides technical guidance, advice, direction, and support/assistance to staff and customers.
  • Designs, maintains and provides daily records, statistics and generates a report that captures departmental sales, productivity, labour costs, inventories etc.
  • Maintains daily floats for Restaurant and Pro Shops and submits change orders.
  • Completes and processes the related staff time cards for approval.
  • Verifies accuracy of Revenue Analysis Reports. Notifies Manager of any shortages or overages.
  • Ensures all Petty Cash expenditures balances the amount paid out in petty cash.
  • Maintains daily spiral food cost database.
  • Application of Menu Engineering and Menu Explosion programs.

Performs Other Related Duties

  • As assigned.

What You'll Need

  • Completion of a College diploma (Hotel and Restaurant Administration) or equivalent knowledge and experience.
  • Three years of previous on the job food and beverage experience.
  • Communication/interpersonal skills both oral and written.
  • Analytical skills with a strong attention to detail.
  • Excellent time management/ organization skills and ability to multi-task in high-pressure environment.
  • Proficient in computer applications software as well as P.O.S. systems.
