Key Responsibilities
Culinary Leadership & Menu Development
- Lead the design, development, and ongoing evolution of an Italian-inspired à la carte menu with thoughtfully integrated global flavours.
- Create seasonal, locally informed dishes that highlight premium ingredients and innovative techniques.
- Oversee weekly or special tasting menus, collaborating with ownership on direction and guest experience.
- Maintain consistent quality, presentation, and flavour profiles across all dishes.
Kitchen Management & Operations
- Supervise all kitchen operations, ensuring smooth and efficient service during dinner hours.
- Manage food costing, inventory, portion control, and ordering to meet budget targets while maintaining high standards.
- Implement and uphold kitchen policies, procedures, and systems to ensure operational excellence.
Team Leadership & Training
- Lead, inspire, and mentor the culinary team, fostering an environment of learning, creativity, and accountability.
- Train staff in techniques, recipes, safety practices, and culinary standards.
- Participate in recruitment, scheduling, and performance management for kitchen employees.
Quality, Safety & Compliance
- Ensure full compliance with Nova Scotia food safety standards and health regulations.
- Maintain a spotless, well-organized kitchen and monitor all food handling and sanitation procedures.
- Conduct regular audits of cleanliness, equipment functionality, and food storage.
Collaboration & Guest Experience
- Work closely with ownership and front-of-house management to create seamless service and memorable dining experiences.
- Support special events, holiday menus, and private dining initiatives with thoughtful culinary planning.
- Engage with guests when appropriate to enhance the restaurant's reputation for warm hospitality and exceptional cuisine.
Qualifications & Experience
- Minimum 5–7 years of professional culinary experience, with at least 2–3 years in a leadership or head chef role.
- Strong background in Italian cuisine; additional experience with global flavours or fusion concepts an asset.
- Proven track record in menu development, costing, and kitchen management.
- Exceptional leadership skills with the ability to motivate and grow a cohesive culinary team.
- Red Seal certification or equivalent professional training preferred.
- Passionate about quality, flavour, and continuous innovation.
