Terroni Sud Forno Produzione e Spaccio is our open concept central kitchen, storefront and fully licensed café restaurant with two-floors of full service dining space. In this unique and beautifully designed space, customers can eat and drink while overlooking the kitchen as our chefs and cooks are busy making breads, pastries, pastas and other goods for our locations and for purchase at the storefront.
**What we are looking for**:
We are currently looking for a full time Home Meal Replacement (HMR) Chef. The HMR chef works in our central food production facility Terroni Sud Forno Produzione e Spaccio alongside a team of expert department chefs. The HMR Chef leads the execution of the HMR menu and is an integral member of the team that produces and packages food. Working closely with the Executive Chefs and the Retail Merchandiser to create an exceptional shopping experience, the HMR Chef oversees the making of all items from production through to packaging and display.

**Responsibilities include**:
- Plan, direct and supervise the food preparation and cooking activities for HMR food production
- Develop and follow recipe standards for all HMR food products
- Consistently strive to meet and exceed departmental financial objectives
- Oversee proper safe food handling by maintaining critical control points (CCPs) such as refrigeration temperature control.
- Maintain and enforce a clean and safe work environment by verifying cleaning and sanitation procedures are consistently followed and properly executed as required by Toronto Public Health
- Ensure all HMR items are prepared and packaged in accordance with company standards
- Collaborate on regular menu changes to ensure all prepared food items are seasonal
- Order food and supplies as necessary to ensure efficient operation and maintenance of stock
- Record accurate waste records and review to analyze trends and adjust par levels as necessary
- Work closely with the Retail Merchandiser and the Executive Chefs to achieve goal of zero waste
- Assist the Retail Merchandiser in consistently ensuring retail displays are fully stocked with beautiful and high quality items and are arranged according to planograms
- Train, coach and mentor a diverse team to prepare, cook and package all food items
- Plan and direct kitchen operations in conjunction with the Executive Chefs
- Follow preventative maintenance procedures for all equipment
- Demonstrate proper cooking techniques and methods to staff
- Prepare employee schedule on a weekly basis to suit production needs
- Provide orientation and training to staff on company policies and procedures
**Skills and Qualifications include**:
- Strong leadership and communication skills

- Proven ability to delegate responsibilities and monitor progress
- Excellent Organizational skills
- Expert knowledge of the standards and regulations for food preparation and storage
- Proven ability to work neatly, efficiently and safely
- Understanding of different culinary techniques

- Minimum 2 years experience working in a kitchen leading a production team
- Knowledge of Italian cuisine/language an asset
