The Forge is a new, fusion-style bagel bistro that is elevating the bagel scene in Winnipeg by offering unique, hand-formed artisan bagels directly inspired by the traditions of Poland and England. Unlike most bagels made in Winnipeg, our Polishire bagels are labour-intensive and require extensive stretching and hand-shaping to create the delicious, “creamy chew” that bagel aficionados love. When combined with wholesome ingredients and bold flavour profiles, our products attract those who crave a total taste experience - not just a breakfast staple.

To complement our Polishire bagels, we offer signature, handmade lifts (cream cheeses, jams, and spreads). In addition, we’ve curated a premium, custom-blended espresso and coffee that’s crafted for those who truly appreciate exceptional flavour. **Details**

We are seeking a full-time **Junior Baker**_**&**_**Line Cook (Hybrid/Dual Capacity)**to help with our new and growing venture. This back of house role will be based out of our new location at 692 St. Anne’s Road and will report to both the Senior Baker & Sous Chef. **This full-time role will start at 5:30AM, Tuesday-Saturday**. After the baking production capacity fulfilled, the role will move into a Line Cook capacity to help with the preparation of customer orders.

Key responsibilities of the **Junior Baker** capacity include working closely with the Baking Team and following their established procedures to ensure all baked goods meet quality standards, including taste, texture, and presentation. You will be responsible for assisting with bakery production, quality control, product assembly, and the maintenance of a clean and safe baking environment, while complying with food safety regulations.

Key responsibilities of the **Line Cook** capacity include preparing and assembling bagels, sandwiches, and other menu items in a fast-paced environment. The role will fulfill the bagel or sandwich order from start to finish, including the preparation of ingredients, cooking according to established recipes, adding lifts (cream cheeses, jams, and spreads), and maintaining a clean, sanitary, and organized kitchen.

**“Junior Baker” Responsibilities**:

- Assisting with bakery operations and following established procedures to ensure all baked goods meet quality standards, including taste, texture, and presentation.
- Preparing and producing bakery items according to recipes under the Senor Baker’s instruction.
- Assisting in the cooking process, ensuring that all food is prepared safely and efficiently.
- Handling food safely and adhering to all food safety guidelines during preparation and storage.
- Other tasks and duties as assigned by the Senior Baker.

**“Line Cook” Responsibilities**:

- Cook and prepare a wide variety of bagel and sandwich items, following standardized recipes and production guidelines under the Sous Chef’s instruction to ensure all orders meet quality standards, including taste, texture, temperature, and presentation.
- Operate a variety of kitchen equipment such as rapid ovens.
- Preparation techniques are of artisan quality, assembling and garnishing bagels and sandwiches to ensure an attractive and appealing presentation, while also controlling portion sizes.
- Set up and stock the workstation with necessary ingredients, tools, and supplies before and during shifts.
- Other tasks and duties as assigned by the Sous Chef.

**Qualifications**:

- Previous Junior Baking or Line Cook education or experience.
- Understanding of various baking and cooking methods.
- Proficient knife handling skills and the ability to operate standard kitchen equipment safely and efficiently.
- Knowledge of food safety and sanitation practices including valid Canadian food handler’s certificate.
- Reliable and punctual for early morning start times (**5:30am start time**)
- Reliable transportation to arrive for 5:30am start time.
- Excellent communication and interpersonal skills to coordinate with the baking and kitchen team and front-of-house staff.
- Ability to stand and walk for long periods, and lift up to 35 lbs.
- Ability to work under pressure and meet deadlines.
- Organization and attention to detail.
- A positive attitude and the ability to work effectively in a team-oriented environment while managing multiple tasks efficiently.
