**Job Summary**

Akira Back is looking for a Supervisor Sushi Cook that would be responsible for handling a wide range of raw fish and other ingredients, managing food stock and working with an attention to detail to fulfill all orders within quality standards. Cleanliness is key and maintained throughout service and they will always go out of their way to take care of our guests. **Duties and Responsibilities**
- Preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed.
- Ability to customize customers’ orders according to preferences and food allergy considerations.
- Partner with the restaurant staff to ensure the safety and sanitation of our facilities are in compliance with Health and Safety regulations.
- Prepare sushi according to recipes or instructions and effectively execute sushi plates and rolls.
- Monitor food stock and place orders as needed.
- Ensure all food and other items are labelled, stored properly, and rotated accordingly.
- Ensure production area is always cleaned and ready for use.
- Other duties or responsibilities as assigned or required.

**Qualifications**
- 3 year cooking experience in a fast-paced, high-end restaurant.
- Experience cooking and handling food in a high-volume dining restaurant.
- Previous experience with Japanese cuisine is a requirement.
- Possession of a culinary diploma is an asset.
- Understanding of professional cooking and knife handling skills.
- Ability to take direction and work calmy and effectively under pressure.
- Excellent communication and organizational skills.
- Positive attitude and willingness to learn.
- Able to spend 100% of the time standing.
- Ability to lift items of up to 40 lbs.

**_Note: salary will be dependent on experience._**
