- **Production Manager’s **_role is to oversee the production staff and monitor the production process including personnel. It is important to be organized so that all tasks associated with production is overseen and deadlines are met. They will be required to manage equipment and schedule maintenance. The role will include developing cleaning and sanitation programs and enforcing them.
- **Roles and Responsibilities**:_

**1. SOFT SKILLS**

Ø Maintain proper flow and operation of the production room

Ø Provide staff with proper training and detailed instructions

Ø Effective and concise communication for broad comprehension

Ø Adapt to changing schedules and demands (staff / customers)

Ø Assist staff if they struggle with their responsibilities

Ø Develop growth programs for team members

Ø Coordinate with shipping and receiving to ship the right product to the customer

Ø Coordinate with shipping and receiving for proper storage of products

Ø Training staff with current safety guidelines

Ø Establish cohesive communication with all departments

**2. ADMINISTRATION**

Ø Schedule Bi-Annual Reviews

Ø Administration of protocols and procedures when required

Ø Enforce the highest level of safety while operating machinery

Ø Enforce safety procedures outlined in the safety manuals and training

Ø Enforcing use of hair nets, beard nets (if applicable), hard hats, steel toes and smocks before entering production area

Ø Enforce hygiene protocols for entering and exiting production room

**3. SAFETY PROTOCOLS**

Ø Ensure temperatures are monitored and maintained at food safe levels

Ø Ensure all meat is covered and properly stored

Ø Prevent cross contamination

Ø Daily degreasing, cleaning and sanitization of production equipment and surfaces

Ø Properly disposal of non-edible products

Ø Track the cleaning logs and perform luminometer testing

**4. PRODUCT STANDARDS**

Ø Quality and consistency control

Ø Calibration and proper use of Scales

Ø Ensure proper labelling and product presentation

Ø Monitor specifications on custom orders

Ø Handling of final product including temperature control

**5. ORGANIZATION**

Ø Build production prioritization schedules

Ø Forecast future production volumes

Ø Submit yield reports

Ø Monitor production inventory

Ø Ensure that production logs are filled properly

Ø Schedule staff and monitor breaks to ensure proper coverage

Ø Verify cut lists and distribute to departments

Ø Collect data on production volumes and output

Ø Assist in developing new protocols and systems (HAACP)

**6. EQUIPMENT**

Ø Schedule preventative maintenance and fill logs

Ø Troubleshoot equipment and production lines to avoid downtime

Ø Train staff on how to properly operate equipment (roll stock, vacuum sealers, scales, high volume pressure washers, mixers, grinders, forming machines and tenderizers)

Ø Ensure that equipment is not used outside of its intended purpose
