Summerhill Market is a boutique grocery store chain in Toronto that specializes in scratch-made prepared foods and on-trend ingredients. Our stores go above and beyond a typical grocery store by offering an extensive rotating selection of ready to eat gourmet meals, freshly baked goodies, and curated hard to find groceries.
Summerhill Market is looking for a **Bakery Production Manager** to lead our Bakery Production Kitchen
The Bakery Production Manager is responsible for manage the daily production and order fulfillment for our 6 retail locations and Commissary kitchens. The Bakery Production Manager oversees the workflow of full cycle production encompassing all stations - receiving, mixing, portioning, sheeting, baking, finishing/decorating and packaging. This role requires you to manage a team of approximately 55 staff across 2 shifts on a 7 day production schedule.
**Duties & Responsibilities**:
As a member of the Summerhill Market Management team, you will conduct yourself with integrity and are committed to providing the best possible service and/or products to Summerhill’s customers, staff and clients. The responsibilities of the Bakery Production Manager include but are not limited to the following:
- Actively managing the high-volume production of baked goods at the Bakery Production Kitchen, which includes: ordering and inventory control, food safety and quality assurance, baking operations, supporting recipe creation, etc.
- Coordinating daily production tasks across all stations, from mixing and scooping/scaling to baking, decorating/garnishing and packaging to ensure effective pre-planning, communication and execution amongst Team Leads
- Manage the workflow of all bakery production activities throughout the kitchen and review all practices, procedures, personnel, and equipment to drive continuous improvement
- Establish an environment that fosters creativity, the exploration of efficiencies and teamwork
- Ensure the facility is fully operational and all equipment are serviced, repaired, and maintained to extend the lifecycle
- Training and coaching bakery staff to ensure food quality, production speed, food safety, and health and safety practices are continuously met
- Maintaining a hands-on approach to management with a strong presence working in the Bakery Kitchen and the ability to work at all stations as needed
- Acting as a liaison between Store and Bakery Retail Management and Bakery Production Staff to communicate menu changes, specials, shortages and maintain a pulse on consumer feedback
- Maximizing production efficiencies, while maintaining high quality standards
- Minimizing wastage through reviewing retail sales, accurate ingredient calculations, effective ordering and inventory control, utilization of surplus, etc.
- Driving continuous improvement efforts and implementing impactful change
- Maintaining a pulse on industry trends and collaborating to drive food innovation
- Championing food safety and health & safety initiatives to ensure product quality and consistency is maintained; providing a safe and healthy working environment as a member of the JHSC that is in compliance with MOL, OHSA, food safety standards, etc.
- Adhering to all company policies, procedures and practices
- Performing HR and administrative duties, including: scheduling, providing information for payroll purposes, conducting workplace investigations, administering disciplinary action, etc.
- Maintaining a clean, organized production and storage space
- Additional duties as required
**Skillset requirements**:
- Passion for food - you are a true foodie at heart
- Dedication to delivering high quality, consistent products to the retail stores - you love our customers as much as we do
- 3-5 years+ of senior leadership experience managing bakery production in the grocery, restaurant, hospitality or food processing/manufacturing industry
- Hands-on approach to leadership; able to manage a growing team of 55+ employees across 3 shifts in a high-volume production kitchen
- Post-secondary degree in Bakery & Pastry Arts, Culinary Management, Business, Supply Chain Management, or relevant field is an asset. Lean six sigma certification is an asset.
- Knowledgeable in all aspects of food production operations, including: production planning, inventory management, food safety, quality assurance, process improvement, equipment maintenance, supply chain and logistics management
- Continuous improvement mindset with the ability to identify gaps/areas for improvement and implement meaningful change/resolutions
- Excellent organization, time management and troubleshooting skills
- Strong business acumen with the ability to analyze financial data and reports in conjunction with business operations to make effective decisions on resource allocation
- Excellent communication skills and a collaborative approach to leadership skills with the ability to engage and motivate employees to work as a cohesive team
