**Company description**

We are a craft brewery in Kelowna BC, serving up both rustic and high-end feel-good comfort food. We serve our own beer, along with cider and wine from our neighbours. We are a 195-person capacity space, also hosting events on-site, and are all-season. We offer full catering for venue bookings, which include weddings, corporate events, and Christmas parties. We are open Tuesday-Thursday 12-9pm, Friday and Saturday 11am-10pm, Sundays 10am-7pm for all-day brunch.

The Head Chef is responsible for the overall kitchen operations, ensuring maximum guest satisfaction through planning, organizing, directing, & controlling the Kitchen operation. They lead the staff & managing all food related functions, with assistance from the Sous Chef. Supervises all kitchen areas to ensure a consistent, high quality product is produced.

Head Chef Duties & Responsibilities:

- Interacts with FOH to obtain feedback on product quality & service levels.
- Responds to & handles guest problems & complaints.
- Be aware of financial budgets & goals.
- Handles monthly & yearly inventory, with help from Sous Chef
- Ensures that guests are always receiving exceptional dining experiences
representing true value for their money.
- Ensures that all recipes & product yields are reviewed regularly.
- Ensures all food items are prepared as per standard recipe while maintaining portion control & minimizing waste.
- Ensures food stock levels within culinary department areas are of sufficient quantity & quality in relevance to Rustic Reel's occupancy & function forecasts.
- Ensures that meals & dining services are of a consistently high standard.
- Ensures that cooks are always in clean, tidy uniforms & are always presentable to be in guest view.
- Ensures that all food preparation equipment is being used safely & correctly, & that it is cleaned & maintained.
- Makes sure all culinary operations manuals are updated.
- Ensures that the culinary department adheres to all Rustic Reel policies & procedures.
- Handles the creative menu planning & correct food preparation for all outlets including Rustic Reel caterings, features & beer launches.
- Works in close conjunction with the FOH Managers, Brewer & Owner to create a healthy working environment.
- Ensures that all relevant set-ups are prepared ahead of guest’s arrival & in adherence with Rustic Reel standards.
- Is aware of new items, which are introduced onto the menu/feature board, & keeps up with current product trends.
- Projects a positive & motivated attitude amongst all associates.
- Frequently verifies that only the highest quality products are used in food preparation.
- Ensures that all food products received into Rustic Reel are of the required
standard & quality, & are stored & rotated correctly.
- Is responsible for the supervision of all stewards &/or dishwashers in their activities within the culinary department.
- Ensures that the overall culinary department is motivated & that positive feedback on work performance is given.
- Coaches employees in a timely manner & in accordance with Company policy.
