At Chez Lionel, we strive to create memorable experiences that delight our guests and leave a lasting impression. As we expand in Kanata, Ontario, we are seeking a talented Chef to join our team.
**Position Overview**:
You will be responsible for the overall success of the daily kitchen operations, event and banquet operationsas well as the guidance and development of staff.
Demonstrate your team's culinary talents by personally performing tasks while leading staff and managing all food-related functions.
Ensure that food safety and sanitation standards are met.
**Food Quality**:
- Ensure the highest standards of food quality, presentation, and taste in all dishes served at Chez Lionel.
- Control the preparation, quality, and serving of dishes, in compliance with technical sheets.
- Conduct regular tastings and quality checks to identify areas for improvement and maintain the integrity of our culinary offerings.
- Adhere to hygiene, sanitation, and food safety standards and procedures.
- Address any customer questions and concerns.
**Food Cost**:
- Manage food costs through efficient purchasing and stock management, portion control, and waste reduction strategies.
- Manage all expenses related to the smooth functioning of the kitchen.
- Implement cost-saving measures without compromising food quality or customer satisfaction.
**Labor Cost/HR**:
- Recruit, hire, and onboard new kitchen staff, ensuring a diverse and inclusive team reflects Chez Lionel's values and culture.
- Create and maintain staff schedules to optimize labor costs while ensuring adequate coverage during peak hours.
- Train and mentor kitchen staff to improve efficiency and productivity, reducing labor costs without sacrificing quality or service standards.
- Foster a positive and collaborative work environment where teamwork, creativity, and excellence are celebrated.
- Handle employee concerns and conflicts promptly and professionally, promoting open communication and problem-solving.
**Other Responsibilities**:
- Maintain a clean and organized kitchen environment, in compliance with health and safety regulations.
- Collaborate with the management team to develop and execute promotional events and special menus.
- Stay updated on industry trends and best practices to continually elevate the culinary experience at Chez Lionel.
**Qualifications**:
- Proven experience as a Chef in a high-volume restaurant offering quality cuisine, preferably with a specialization in French cuisine.
- Experience in catering/hospitality services required.
- Culinary degree or equivalent certification preferred.
- Strong leadership and communication skills with the ability to motivate and inspire a team.
- Passion for culinary excellence.
- Knowledge of food safety regulations and hygiene standards.
- Ability to work evenings, weekends, and holidays as needed.

**Description globale du poste**:
Vous êtes responsable du succès global des opérations quotidiennes de la cuisine, ainsi que du perfectionnement du personnel.
Vous êtes chargé de mettre en valeur le talent culinaire de votre équipe, de diriger le personnel tout en gérant personnellement toutes les fonctions liées à la préparation des aliments.
Vous vous assurez que les normes sanitaires et alimentaires soient respectées.
**Qualité des aliments**:
- Assurer de respecter les plus hautes normes de qualité de préparation des aliments, de présentation et de goût dans tous les plats servis Chez Lionel.
- Contrôler la réalisation, la qualité et la présentation des plats, dans la conformité des fiches techniques.
- Effectuer des dégustations régulières et des contrôles de qualité pour identifier les besoins d'amélioration et maintenir l'intégrité de nos offres culinaires.
- Respecter les normes et les procédures d’hygiène, salubrité et de sécurité alimentaire
- Répondre aux éventuelles questions et préoccupations des clients.
**Coût des aliments**:
- Gérer les coûts alimentaires grâce à une gestion efficace des achats et des stocks, au contrôle des portions et à des stratégies de réduction des déchets.
