**Job Summary**:The **Production Team Lead** is a hands-on leadership role responsible for assisting in the supervision of daily operations in the sausage kitchen, ensuring product consistency and adherence to food safety standards.
**Responsibilities**:
- Supervise and lead the sausage kitchen team, ensuring all production targets, quality standards, and timelines are met.
- Operate all sausage production equipment, including but not limited to the bowl cutter, smokehouse, stuffing and linking machines.
- Assist in preparing and batching meat according to production recipes and specifications.
- Ensure proper handling and preparation of meat mixtures, seasonings, and casings.
- Uphold strict adherence to hygiene, sanitation, and food safety protocols at all times.
- Monitor production processes and troubleshoot issues as they arise.
- All other duties as assigned.
**Requirements**:
- Supervisory experience is required (experience in food manufacturing or meat processing is preferred).
- Willingness and ability to learn and operate all kitchen machinery and production equipment.
- Ability to learn how to properly batch meat according to company standards and recipes.
- Strong attention to detail and ability to follow precise instructions.
- Knife skills are an asset, but not mandatory.
- Strong organizational and communication skills.
- Team-oriented with a proactive and problem-solving mindset.
**Essential Functions**:
- Cold production environment (temperature-controlled), exposure to extreme temperatures (freezers).
- Physically demanding (lifting up to 50 lbs, pushing and pulling up to 100lbs, standing for extended periods, bending and twisting, repetitive tasks and manual dexterity).
- Fast-paced and deadline-driven.
- Early morning start, flexibility in scheduling required.
