**Position Summary**

The Kitchen Cook lead will assist with overseeing and preparing ready to eat (RTE) food products for sale in retail stores and food service. The department has a structured, planned prepared meals, par-fry, platters and food production schedule.

**Key Accountabilities**

**Accountability: Production Kitchen Cooking**(80% of time)
- Prepare a variety of food products according to instructions, following approved recipes and procedures.
- Knowledge & experience in precise recipe following, scale, measuring formats.
- Cooking, preparing & building a variety of meals, soups, sauces, par-fry products, salad & potato production, cold meat & vegetable platters & sandwiches.
- Using a variety of cooking method including & not limited to frying, steaming, Boiling, simmering & baking.
- Knife skill techniques to ensure safe & effective use to complete various cutting method such as slicing, dicing & chopping.
- Use of a variety of cooking & kitchen equipment such as Rational/Combi oven, kettle, skittle, large mixers, blast chillers & fryers.
- Observe and test food using proper methods and equipment to ensure it is cooked, cooled and prepared according to the outlined specifications.
- Complete all cooking duties within timeframes established for each task.
- Assure adherence to all standards of food safety quality, preparation, recipes and presentation in conjunction with the specifications.
- Ensure efficient, cost-effective operation and profitability of food production.
- Check all incoming supplies & record shortages.
- Verifies all food products are properly dated and organized for quality assurance.
- Ensure a first
- in, first -out food (FIFO) rotation system.
- Monitor temperature, stocking and food rotation of all holding/storage & refrigeration units.
- Ensure high food safety sanitation standards are always met.
- Inspect all preparation and cooking equipment on a regular basis to ensure all equipment is clean, sanitary, and in perfect operating order.
- Ensure all kitchen activities operate in an efficient, safe manner and meets all deadlines.
- Strong organizational skills, ability to recognise & prioritize tasks to ensure successful & efficient completion of tasks.
- Work independently while following precise instructions and formulas.
- Be an effective team player to achieve set out goals and contribute to a positive workplace.
- Follow health and safety rules and practices.
- Other duties as may be assigned.

**Accountability: Safety** (10% of time)
- Use all equipment safely and according to outlined directions.
- Record keeping including temperatures, sanitation, and quality standards.
- Participate in all Safety Toolbox Meetings.
- Understand the employee’s rights and responsibilities with regards to safety
- Other duties as may be assigned.

**Accountability: Sanitization** (10% of time)
- Ensure cleanliness and maintain work areas, equipment and utensils.
- Complete all sanitization duties within timeframes and criteria established for each task
- Ensure high food safety sanitation standards are always met.
- Completing department Pre-op’s & adhering to strict hygiene procedures.
- Other duties as may be assigned.
