Renowned Chef Antonio Park and Scale Hospitality are seeking passionate, experienced Sushi Cooks to join the back of house team This ultra-luxurious dining & lounge concept boasts one of the greatest skyline views in the city, as well as not one but two spectacular terraces overlooking downtown Toronto.

We are looking for an energetic **SUSHI COOK** to prepare sushi dishes in accordance with food health and safety regulations and restaurant standards.

**KEY DUTIES AND RESPONSIBILITIES**:

- Expertly cutting, slicing, and filleting different types of fish.
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Chef de Cuisine when quality is sub-standard.
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
- Maintaining a clean work environment in order to prevent food contamination.
- Regularly taking inventory of food supplies and other products.
- Reporting any problems with kitchen equipment to the manager on duty.
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
- Communicating with wait staff to ensure that special requests and food allergy considerations are met.

**SKILLS & QUALIFICATIONS**:

- Minimum 1 years experience with making all types of sushi including maki
- Must have good attitude, positive energy and be hardworking
- Excellent attention to detail with a creative flair
- Ability to work weekends, holidays, mornings, and nights
- Must be able to follow oral and written instructions
- Must exhibit a high degree of professionalism (i.e. punctuality, commitment to the job, well-groomed, mannerly, great team work etc.)
- Excellent food knowledge and understanding of cooking terms/methods
- Skills to coordinate and organize processes and people
- Valid food handler's license.
