**Pastry Chef / Baker — Modern Steak (Calgary, AB)**
**Full-Time | High-End Steakhouse**
Modern Steak is Calgary’s leading premium steakhouse, known for luxury dining, exceptional ingredient sourcing, and bold culinary creativity. We are looking for a **skilled Pastry Chef with strong experience in bread, baking, and dessert production** to join our culinary team.
**Position Overview**
The Pastry Chef is responsible for creating, producing, and managing all dessert and bread programs for Modern Steak. This includes daily production, recipe development, quality control, and ensuring all pastries and baked goods meet the high standards our guests expect.
**Key Responsibilities**
- Execute and oversee production of **desserts, breads, pastry items, doughs, and baked goods** for lunch, dinner, and special events.
- Prepare house-made items including **bread, pastries, cakes, tarts, plated desserts, and seasonal features**.
- Maintain consistency, quality, and presentation according to Modern Steak standards.
- Develop new dessert features and contribute to menu innovation.
- Manage inventory, ordering, and cost control for pastry ingredients.
- Maintain a clean, organized, and efficient pastry station and prep area.
- Ensure compliance with **food safety, sanitation, and HACCP standards**.
- Collaborate with the Executive Chef and culinary team on menu planning and event menus.
- Support training of staff on dessert plating and production techniques when required.
- Uphold Modern Steak’s commitment to excellence, consistency, and premium-quality dining.
**Requirements**:
- **2-4 years experience** as a Pastry Chef, Baker, or Pastry Cook in a professional kitchen.
- Strong background in **bread making**, dough handling, fermentation, and artisanal baking techniques.
- Proven skill in dessert execution, pastry fundamentals, and plated-dessert presentation.
- Solid understanding of kitchen operations, recipe scaling, and food costing.
- Ability to work independently in a fast-paced environment with strong attention to detail.
- Strong time management and organizational skills.
- Ability to lift up to 40-50 lbs and work early morning shifts as needed.
- Formal culinary or pastry education is an asset but not required.
