Job DescriptionWHAT'S THE JOB?The Baker/Breakfast Cook contributes to the overall success of the culinary team by getting our guests started each day with a hearty breakfast. Working overnight, the Breakfast Cook/ Baker is responsible for producing all required items as per contract scope daily, while maintaining a clean and enticing display of products during service. The Breakfast Cook/Baker will demonstrate strong organizational and time management skills.The position involves a remote work lifestyle in a camp setting with the following amenities:All meals and accommodations are provided Travel is provided to and from the site locations from designated locations in the Thunder Bay, Dryden and surrounding areaPrivate room with cable television Access to Wi-Fi Access to laundry facilities and detergents Access to a gym and common areas Key responsibilities include:Maintaining a safe working environment at all timesFollowing all safety controls related to Covid including regular handwashing, proper use of PPE and enhanced cleaning/sanitation requirementsProviding excellent and consistent service for all guests using the KDR facilitiesMaintaining a clean and organized workstation throughout the shiftPreparing all breakfast items efficiently, as required. Items include, but are not limited to:Eggs, prepared to order, feature items (Eggs Benedict, Breakfast Burritos, Feature Omelets and other preparations with eggs)Bacon, pork or beef sausage, ham, and other meatsQuick breads (pancakes, muffins, biscuits, fritters) and other sweet and savory preparations such as French toastBaked beans & hot cerealsSome scratch baking (cookies, squares, bars etc.)Some pre-fab bakingEnsuring that food safety requirements are being followedCompleting all HACCP and Production logs as requiredLabelling and dating of all products prepared for service as requiredOversight of sandwich maker (ie. Production and quality) and Front-of-House stocking during breakfast service.Removing all used pots, pans, utensils, etc., to ware washing areaPerforming end-of-shift cleaning, sweeping, and mopping of workstationCompleting all weekly and monthly cleaning tasks as scheduledRemoving garbage from workstation as requiredReceiving and storing all supplies (food, beverage, chemical and paper/disposable)Assisting with any other tasks as assigned by supervisorAs night shift lead, the Breakfast Cook/Baker is required to direct and assist sandwich makers and GH’s with their tasks as necessary to ensure breakfast service and lunch are at full scope throughout the duration of shift, the kitchen and dining room are maintained in a clean and orderly fashion, and provide a positive experience for guests and colleagues.Additional responsibilities:This position includes supervisory responsibilities including monitoring operations and team member’s performance during the shift. All issues where progressive discipline would apply must be discussed with the Executive Chef, Executive Sous Chef or Sous Chef, depending on availability. Issues must be addressed in a timely manner, preferably no later than the end of the shift so that any disciplinary action is carried out as close in time to the issue as possible.QualificationsWHO ARE WE LOOKING FOR?Previous experience providing a hot breakfast service in high volumes is requiredExperience with producing baked goods (scratch baking and/or pre-fab items) in high volumes is requiredCurrent Food Safe certificate is requiredLarge-scale cooking and baking experience in camp settings, banquet halls and/or hotels is a strong assetRed Seal or other certifications is an assetExperience in accurately producing weekly inventoriesPrevious supervisory experience is an assetA team-player who is committed to providing client satisfactionMust have valid government issued photo ID for travel to siteBe able to handle the following physical demands:Lift, carry, push, or pull up to 50 lbsClimb ladders or stairsStand, walk, squat, kneel or sit according to task for extended lengths of timePerform repetitive hand work requiring full use of both handsPerform work with arms at full lengthWork with arms above shoulder heightAdditional InformationWHAT’S IN IT FOR YOU?Enjoy excellent work-life balance with a 2 week on/ 2 week off rotationAbility to expand skills in a large camp atmosphere Whereas other companies are downsizing, we are growingBe #1 on day 1 by joining an industry leaderWork schedule and remuneration: Baker/Breakfast Cooks work on a rotational schedule of 2 weeks on/2 weeks off. Site locations are in remote settings, requiring either air travel to site, or via ground on our shuttle. You may be required to work nights, weekdays, weekends, and general holidays.
