Job Description


We are seeking an exceptional individual to join our team as a Dining Room Manager at Château de Mercuès. As a key member of our luxury hotel service team, you will be responsible for providing an outstanding dining experience for our guests.


Duties and Responsibilities



  • Provide exceptional service to all guests, ensuring their comfort and satisfaction throughout their dining experience.
  • Offer personalized service to each guest, ensuring their needs are met and exceeded.
  • Supervise and train dining room staff to maintain high standards of service and quality.
  • Plan and coordinate dining room operations, including scheduling and staffing.
  • Ensure the physical appearance of the dining room area and workstations are maintained to the highest standards.
  • Supervise the appearance of dining room tables, including table linens, napkins, silverware, and table setup.
  • Schedule work assignments for all dining room team members, assigning specific tasks and spot-checking to ensure standards are met.
  • Maintain accurate and up-to-date records of team member attendance, reservations, incident reports, and schedules.
  • Assist team members on the floor as needed, ensuring seamless service delivery.
  • Perform other duties as required to maintain the highest standards of service and quality.

Qualifications and Requirements



  • Minimum 5 years of experience in a food and beverage role, with 2+ years in a similar role.
  • Thorough knowledge of fine dining service procedures and functions.
  • Excellent knowledge of food and wine pairing.
  • Ability to communicate effectively with guests, peers, and supervisors.
  • Ability to work in a fast-paced environment, maintaining a positive attitude and high level of professionalism.
  • Smart Serve certification, required.
  • Ability to maintain confidentiality and handle sensitive information with discretion.
  • Exemplary interpersonal skills, with the ability to work cooperatively as a member of a team.
  • Effective time management skills to organize and prioritize workload.
