Senior Kitchen Team Member

The Senior Kitchen Team Member is a key position in the kitchen team at Westwood Plateau, responsible for producing the bulk of the production necessary for day-to-day operations. This role is ideal for an individual who is passionate about cooking and has a strong work ethic.
Key Responsibilities- Work directly under the Sous Chef and 1st Cook to ensure seamless kitchen operations.
- Prioritize prep lists and ordering lists to maintain efficient kitchen workflow.
- Process incoming bills, prioritize tasks, and ensure timely pick-up to minimize delays.
- Maintain optimal prep levels, adjusting to busy and slow days to meet kitchen demands.
- Ensure the restaurant line is properly stocked with adequate backups to prevent stockouts.
- Utilize raw by-products, leftovers, and extras to create specials, soups, and other cost-saving initiatives.
- Develop and maintain comprehensive knowledge of the menu and recipes to ensure consistency and quality.
- Assist the dishwasher as needed to maintain a clean and efficient kitchen environment.
- Ensure the cleanliness and safety of the kitchen, adhering to all health and safety protocols.
- Receive and store food deliveries, checking for quality and rotation to prevent spoilage.
- Monitor and maintain the condition of stored food to prevent contamination and spoilage.
- Estimate food quantities to prepare and cook, adhering to specified guidelines.
- Select and apply spices, herbs, and condiments to enhance flavor and presentation.
- Prepare basic stocks and sauces to support menu offerings.
- Produce food with correct taste, temperature, and visual appeal, following supervisor direction.
- Identify, clean, and operate kitchen equipment correctly to maintain efficiency and safety.
- Report equipment malfunctions to the Sous Chef to ensure prompt repair and minimize downtime.
- Provide clear and accurate instructions to 3rd cooks and dishwashers to ensure seamless kitchen operations.
- Demonstrate a strong understanding of all menus, recipes, and standards for the area.
- Anticipate potential kitchen needs, such as defrosting and ordering, to prevent stockouts and minimize delays.
- Understand the concept of food costing and contribution to optimize kitchen operations.
- Must possess speed and efficiency in processing various types of food, combined with good basic cooking skills.
- Requires a minimum of three years of cooking experience to ensure proficiency and expertise.
- Ability to cook steaks to desired doneness is essential.
- Strong knowledge of various cooking methods and techniques is required.
- Comprehensive understanding of soups and sauces is necessary to support menu offerings.
