About the Role:

We are seeking a highly skilled and experienced Sous Chef to join our team at Resorts of the Canadian Rockies. As a key member of our culinary team, you will be responsible for leading the kitchen in the absence of the Chef and ensuring that our guests receive an exceptional dining experience.

Key Responsibilities:

  • Lead the kitchen team in the absence of the Chef, calling the line and communicating with Front of House staff to ensure seamless service.
  • Assess the needs for preparation work and supplies prior to service, ensuring that all necessary ingredients and equipment are available.
  • Ensure that food is received, stored, handled, and prepared in a hygienic and Food Safe compliant manner, maintaining the highest standards of quality and presentation.
  • Prepare, cook, and plate food to established quality and presentation standards, consistently delivering exceptional dishes to our guests.
  • Participate in and/or lead team meetings, and season start and end procedures, ensuring that all team members are informed and prepared for service.
  • Assist with supervising and training kitchen staff, providing guidance and support to ensure that they are equipped to deliver exceptional service.
  • Assist with inventory and menu development as needed, working closely with the Chef and other members of the culinary team to ensure that our menu offerings are innovative and appealing to our guests.
  • Maintain effective communication throughout the restaurant and with teammates, ensuring that all team members are informed and aligned with our service standards.
  • Ensure that all cooks maintain a clean and safe workspace at all times, adhering to our high standards of cleanliness and safety.
  • Plan and develop catering events, wine dinners, and other special functions, working closely with the Chef and other members of the culinary team to ensure that these events are successful and memorable.
  • Ensure that other team members are supported in their roles as necessary, providing guidance and support to ensure that they are equipped to deliver exceptional service.
  • Assist with other duties as assigned, contributing to the overall success of our culinary team.

    Requirements:

    • Minimum 3 years' previous experience in a food preparation role in a professional dining establishment.
    • Strong leadership skills, consistently ensuring that food and presentation standards are maintained.
    • Love of, and passion for, food and cooking, with a desire to continuously improve and innovate.
    • Physical ability to lift up to 30 lbs. and perform manual labor, standing for prolonged periods.
    • Ability to work flexible hours, including weekends, evenings, and holidays.
    • Food Safe or other food handling certification – an asset.
    • Culinary background, education, or diploma – an asset.
