Key Responsibilities
  • Maintain a file of recipes, including ingredients, portions, and directions for preparation and presentation of each dish.
  • Assist the Executive Chef in developing menus, recipe cards, and specifications according to established standards.
  • Set standards and methods for portion control for each dish on the menu, considering perceived value.
  • Ensure all recipes are followed exactly and consistently.
  • Assume responsibility for the kitchen in the absence of the Executive Chef.
Requirements
  • Culinary degree or related training equivalent in the hospitality industry.
  • At least 2 years of relevant work experience in a similar scope and title.
  • Experience within luxury brands or markets preferred.
  • Food Safety Manager Certification or attainable within 30 days.
