Job Summary

The successful candidate will be responsible for cutting beef, lamb, pork or veal carcasses into primal cuts, removing feathers and singeing poultry, and preparing meat and poultry for further processing or packaging.

Key Responsibilities
  • Cutting carcasses into primal cuts using cleavers, knives, power cutting tools, and saws
  • Removing feathers and washing poultry to prepare for further processing or packaging
  • Cutting meat and poultry into specific cuts for institutional, commercial, or other wholesale use
  • Removal of bones from meat
