POSITION SUMMARY:

This role is integral to the operations of the YMCA of the Rockies, Snow Mountain Ranch, which serves as a family and group conference and retreat center, as well as a residential camp, welcoming over 50,000 guests each year. The Assistant Kitchen Manager is chiefly accountable for overseeing the daily kitchen and back-of-house food service functions at Snow Mountain Ranch. Responsibilities encompass menu development, procurement, food preparation, maintaining kitchen hygiene, managing daily catering services, and organizing special events, alongside staff scheduling and ensuring guest satisfaction. Additionally, this position entails adherence to all federal, state, and local health regulations.

ESSENTIAL FUNCTIONS:
  • Supervise daily kitchen operations and assist in prioritizing tasks for kitchen personnel.
  • Manage all kitchen activities in the absence of the Executive Chef.
  • Ensure compliance with OSHA, Department of Health, USFDA, and YMCA standards.
  • Collaborate with the Executive Chef to facilitate catering and group events.
  • Assist in the training, development, and oversight of both year-round and seasonal staff to maintain high morale and productivity.
  • Strive for excellent guest satisfaction and seamless collaboration between back and front of house.
  • Work during holidays, weekends, and various shifts.
  • Participate in training back-of-house staff, providing coaching, and coordinating with HR for necessary training.
  • Oversee seasonal dining establishments – Buckboard, Skinny Ski.
  • Establish and monitor production expectations for seasonal dining venues.
  • Possess comprehensive knowledge of various food service equipment, including computers, dish machines, broilers, steamers, ovens, slicers, skillets, etc.
  • Fluency in English (both oral and written) is required.
  • Engage in pre- and post-event meetings to address any issues.
  • Exhibit the stamina necessary to thrive in the described work environment.
  • Supervise a substantial team of kitchen staff.
  • Lead catering operations during seasonal events.
  • Hold a valid, state-issued driver's license, maintain an acceptable driving record, and adhere to YMCA driving regulations to be eligible to operate YMCA vehicles.
REQUIREMENTS/QUALIFICATIONS:
  • ServSafe Certification is mandatory.
  • A culinary degree is preferred, along with a minimum of two years' experience in a la carte or buffet dining and high-volume food production.
