Position Overview:
The Chef Trainee plays a crucial role in delivering outstanding culinary experiences to our clients. Reporting directly to the Chef, this position is responsible for ensuring the safety and quality of food prepared at the assigned lodge.
Key Responsibilities:
- Exhibit proficiency in a variety of cooking techniques.
- Under the Chef's guidance, oversee kitchen operations, including staff management, equipment maintenance, food quality assurance, and adherence to food safety protocols.
- Accommodate diverse dietary needs, including vegetarian, vegan, cultural preferences, and food allergies.
- Prepare basic breads and desserts.
- Supervise, mentor, and train kitchen staff as necessary.
- Maintain high client satisfaction by addressing customer concerns professionally.
- Facilitate effective communication through handovers with the Relief Chef and Night Shift Supervisor.
- Complete staff schedules and product orders promptly.
- Follow the cyclic menu system while managing expenses within budget.
- Ensure compliance with the Food Safety Program (FSP) through daily documentation and inspections.
- Conduct monthly FSP audits with the Camp Manager.
- Ensure completion of all cleaning tasks as per schedule.
- Lead toolbox safety meetings in accordance with company policy.
- Ensure all staff complete Field Level Hazard Assessments and Hazard Identifications during shifts.
Qualifications:
- Red Seal Cook designation is an asset.
- A minimum of 5 years of relevant experience in cooking for groups.
- Must successfully complete training and skill evaluations during initial rotations as a 1st Cook.
- Availability for various rotations, including but not limited to 21-7, 10-4, 9-5, and 14-7.
- Must be available for day, afternoon, split, or night shifts.
- A valid Food Safety Certificate recognized by Alberta Health Services and a Standard First Aid Certificate are required.
- Transportation to the camp transfer site is necessary.
- Strong interpersonal and communication skills in English are essential.
- Ability to lift and move up to 25 lbs throughout the work shift.
- Adherence to miscellaneous safety requirements based on position and site standards.
