Job Overview

Aramark is seeking a seasoned culinary professional to lead the operations of our proprietary culinary outlet, Wally's Eatery, located on the campus of Kingston University. This is an all-day breakfast outlet that also provides other options, including pre-prepared and delivered Grab-And-Go items, yoghurt bowls, muffins, cookies, and donuts.

We are looking for a talented Executive Chef who can help us deliver exceptional customer service and food experiences. The successful candidate will be responsible for leading a team of culinary professionals, developing and implementing menu concepts, and ensuring the highest standards of food quality and safety.

Key Responsibilities
  • Lead and manage a team of 5-7 kitchen and front-of-house personnel, providing guidance and support to ensure excellent service and food quality.
  • Estimate food consumption and requisition or purchase food, referencing our PRIMA recipe database to ensure consistency and quality.
  • Select and develop recipes, standardize production recipes, and establish presentation techniques and quality standards.
  • Plan and price menus, ensuring alignment with Aramark's financial goals and client requirements.
  • Ensure proper equipment operation and maintenance, and implement safety and sanitation protocols to maintain a clean and healthy environment.
  • Manage food and labor costs, adhering to Aramark's financial policies and client budgets.
Requirements
  • Post-secondary culinary and/or hospitality diploma is preferred.
  • 2-3 years of previous experience as a kitchen manager or sous chef is an asset.
  • Advanced knowledge of the principles and practices within the food profession is required.
  • Previous experience in costing, planning, food preparation, and budgets is essential.
  • Ability to lead, mentor, and discipline staff in a unionized environment is an asset.
  • Ability to forecast needs, scheduling, training, and succession planning is required.
  • Computer literacy for online ordering, production reports, inventory, timekeeping, and payroll is essential.
  • Demonstrated organization, meeting deadlines, and strong communication skills are essential.
