Summary

The goal of this position is to review and maintain food and beverage costs working with our Executive Chef and Director of Finance to ensure and monitor fiscal success. This includes assisting in the preparation and maintenance of all menu items alongside our Executive Chefs and creating beverage recipes with outlet managers. This position will also help with ROI and Proformas and help determine if projects should be approved or dismissed.

**Job Essentials**:

- Upkeep and running of the purchasing/receiving systems
- Storeroom Security, Rotation, and Par level Maintenance
- Hotel Purchase Order Policy Compliance
- Food and Beverage Cost Controls and Goal Achievement
- Sourcing New Vendors for Cost Improvements and Company Initiatives
- Quality Control at Point of Delivery
- Monthly Inventory
- Maintains cleanliness and organization of storerooms
- Communicates with all departments and assists with their needs for product sourcing
- Coordinates all efforts towards cost control for food and beverage.
- Beverage
- Liaison with beverage representatives and DOO to get new products and allocated products
- Work with the beverage representatives to get deals on products on sale
- Work with representatives and DOO to plan activations throughout the year

This position also includes monitoring product mix reports and analysis to generate information to identify and structure pricing, portion control and menu offerings on all Food & Beverage outlets in mastering the art of monitoring liquor control measures, analyzing beverage pars and identifying possible areas of food waste. Generation of month-end reports summarizing Food & Beverage cost of sales figures and identify areas of refinement and share with the hotels Leadership.

- Ability to evaluate the over all operational methods of handling, storage and recovery
- Inventory management
- Cash handling procedures

**Qualifications**:

- post secondary diploma in hospitality or supply chain management
- must have excellent computer and financial skills
- Must have Food Handler certification
- Must have work authorization for Canada
- Must be motivated, have excellent communication skills and work well with others
