What will I be doing?
As the Chef du Partie you are responsible for assisting the Sous Chef’s and assigning, coordinating and supervising the set-up and food production areas within the kitchen to maximize productivity and ensure food quality, set-up and service are in accordance with the standardized recipes and procedures. You are also responsible for ensuring the cleanliness, sanitization and safety in the kitchen and work areas. Specifically, you would be responsible for performing the following tasks to the highest standards:
- Assign and direct the work on your scheduled shifts and train kitchen associates to maximize productivity and minimize waste.
- Inspect daily use records with the Executive Chef or Executive Sous Chef to make sure that estimates are filled in correctly and associates are following these estimates as closely as possible.
- Check pars for shift use, determine necessary preparation, freezer pull and line set up. Note any out-of-stock items or possible shortages and utilize all leftovers.
- Attend all associates meetings, come up with sound suggestions on solving associates problems and promote and maintain effective communication between all of the food production areas within the kitchen.
- Maintain and supervise good housekeeping practices in all areas in the kitchen and practice and strictly enforce the "clean as you go" policy.
- Prepare food of consistent quality following recipe cards and production and portion standards.
- Start food items that are prepared ahead of time, making sure not to over prepare estimated needs.
- Provide back-up coverage for the Sous Chefs, as needed, and perform any other job related duties as assigned.
Physical Requirements
- Perform medium work - exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects.
- Ability to stand during the entire shift.
- Ability to withstand temperature variations of both hot and cold.
