Dietary Services Supervisor/ Head Chef

**HOURS: 10-hour shifts**
**SUMMARY**
The Dietary Services Supervisor/Head Chef will oversee the entire operation of the dietary services for residents, ensuring among other things, safety, a menu suitable to the residents at Wawel Villa, quality meal choices, proper nutrition and menu rotation, staff training, scheduling, sanitary meal preparation and kitchen operations, and a dining atmosphere where residents are treated with dignity and respect. As Head Chef they will oversee the day to day operation of the dietary services for residents, providing among other things a highly nutritious and appetizing meals suitable to the residents.
**SUPERVISORY RESPONSIBILITIES**
- Establish, implement and enforce Dietary Department policies and procedures.
- Plan, organize, direct and supervise the activities of the Dietary Department to ensure the provision of high-quality food service.
- Plan or adhere to regular, therapeutic, and alternate menus based on Canada’s Food Guide to Healthy Eating, current resident population and special seasonal events.
- Ensure information and instructions regarding residents’ dietary restrictions, allergies and food preferences is followed.
- Maintain accurate records pertaining to each resident’s nutritional care.
- Supervise meal service to ensure appropriate portion control and resident acceptance, conducting Resident food surveys as required.
- Purchase and receive all supplies necessary for daily meal preparation, nourishments and special events.
- Reconcile with orders and monitor food supply quality and inventories.
- Develop and ensure the use of standardized recipes.
- Prepare and communicate monthly and weekly menus using online system.
- Ensure posting of weekly and daily menu.
- Assist to hire and train all Dietary Services employees.
- Establish work procedures, evaluate performance and production making necessary changes to maintain quality service.
- Ensure sanitation regulations pertaining to food preparation and food premises are followed.
- Ensure all Public Health reports are communicated to staff and acted upon.
- Co-ordinate dietary services with other departments as required.
- Participate in budget preparation as required.
- Scheduling staff in the dietary department to ensure all coverage needs are fulfilled. Inputting the schedule to PayWorks Software.
- Verifying and approving Dietary Department hours using PayWorks Software.
**HEAD COOK RESPONSIBILITIES**
- Prepare and serve nutritious and appetizing meals and meal choices for Wawel Villa residents in a safe and attractive manner.
- Provision of meals in Polish and European style according to current resident population.
- Use first quality ingredients and professional cooking techniques that protect the quality of each ingredient.
- Ensure that the food waste and spoilage are kept to a minimum.
- Prepare cakes for special occasions i.e. monthly birthday parties.
- Support Administration with food services as requested for special events or occasions such as training events, board meetings or staff meetings.
- Responsible for the clear and correct labelling of excess food.
- Supervise and direct Cooks and Dietary Aides during basic food preparation, meal service and kitchen cleaning and maintenance.
- Check and record food temperatures daily on a rotational basis for meal times as per Health regulations.
- Adhere to all departmental policies and procedures regarding sanitation, food handling, storage, preparation and serving.
**GENERAL REQUIREMENTS**
- Participate in professional, public and community events to strengthen, broaden and protect the image of and reputation of Wawel Villa.
- Maintain confidentiality of all financial, staff and resident data.
- Be knowledgeable of and practice residence’s fire and safety programs.
- Familiarity with the Residents Bill of Rights
- Adhere to established policies and procedures, making changes as needed to meet requirements of the Retirement Homes Act and other legislation or standards.
- Complete all required training and in-services.
- Any other duties or projects assigned by the Administrator/CEO
**REQUIREMENTS**
- Education and Certificate_
- Culinary School Diploma (mandatory)
- Current Food Handler Certificate (mandatory)
- **3- 5 years of experience managing and directing a staff team**:
- **5-8 years of experience cooking in a professional environment**:
- Certificate from an accredited Food Service Supervision/Nutrition Management program or Food and Beverage Management program (Asset)
- Red Seal Cook or other similar designation (Asset)
- Eligible or interested in obtaining membership in the Ontario Society of Nutrition Management (OSNM)
- Technical Requirements_
