**Responsibilities**:

- Prepare sushi ingredients according to established recipes and standards, including slicing fish, chopping vegetables, and cooking rice.
- Ensure all ingredients are fresh, properly portioned, and stored at the correct temperature.
- Assist in maintaining inventory levels by restocking ingredients and supplies as needed.
- Keep workstations clean and organized, following food safety and sanitation guidelines.
- Support the sushi chef during service by assembling sushi rolls, sashimi plates, and other menu items.
- Assist with the setup and breakdown of the sushi station before and after service.
- Communicate effectively with other kitchen staff to coordinate food preparation and ensure timely service.
- Follow proper knife handling techniques and maintain sharp knives for safe and efficient food prep.
- Adhere to all company policies, procedures, and standards of food quality and presentation.
- Participate in training sessions and workshops to enhance sushi preparation skills and knowledg.

**Qualifications**:

- Previous experience working in a sushi restaurant or Japanese kitchen preferred.
- Knowledge of sushi preparation techniques and familiarity with Japanese ingredients.
- Strong attention to detail and commitment to maintaining high standards of food quality and presentation.
- Excellent communication and teamwork skills.
- Basic understanding of food safety and sanitation principles
- Physical ability to stand for extended periods and lift heavy objects.
- Passion for sushi and Japanese cuisine is highly desirable.
- Legal right to work in Canada
