Cibo Trattoria, located in the Moda Hotel in the heart of downtown Vancouver’s arts and cultural district, is currently seeking an energetic, eager, and ambitious **Head Chef** to join our group of world-class chefs.

At Cibo, every dish centers on the use of fresh, natural, and unique ingredients from the finest local and Italian suppliers. Most importantly, Cibo’s dishes possess a subtle myriad of pleasing flavors and textures, with a simple combination of color and plating that yield the ultimate in rustic, Italian cuisine.

You will be responsible for leading, motivating and engaging the culinary team to deliver the highest standard. You will be working to ensure that the vision is expressed through menu offerings and level of service as well as assisting in the hiring, training and expectations of your kitchen team.

The Head Chef is responsible for planning and coordinating activities related to food preparation, cooking and optimal use of foodstuffs. He/she works with the General Manager to develop menus. The Head Chef oversees preparation of menus and keeping inventory. He/she also oversees training of the kitchen staff.

**RESPONSIBILITIES**:

- Coordinates and supervise the work of kitchen staff;
- Participates in the hiring of kitchen staff and plans training of new employees or those assigned to a new position;
- Sets kitchen work schedule and plans replacements for leave requests;
- Ensures stock control and financial targets are met
- Verifies kitchen staff timesheets for payroll;
- Notifies management of any issues relating to the guests experience
- Ensures compliance with the dress code established by management and with hygiene and food safety standards;
- Explains culinary techniques and the use of equipment to the cooks;
- Teaches cooks about decoration and food presentation;
- Plans and organizes special events in collaboration with management;
- Ensures courteous and respectful service in a relaxed atmosphere;
- Maintains communication with guests and ensures their satisfaction;
- Oversees respect for health and safety rules at work;
**KITCHEN**:

- Plans the menus and conducts a quarterly evaluation;
- Ensures the optimal use of foodstuffs;
- Assesses the needs of guests;
- Ensures food quality and conducts follow-ups (return of merchandise vs. credits);
- Evaluates and monitors purchase and production costs compared to approved budgets;
- Ensures meal preparation and cooking;
- Conducts monthly inventories and places supplier orders (food, supplies, kitchen equipment);
- Makes necessary arrangements for the maintenance of the kitchen equipment;
- Ensures receipt and examination of goods;
- Assumes responsibility for proper operation and safe use of kitchen equipment and appliances;
- Performs other related tasks.

**KEY SKILLS / QUALIFICATIONS**:

- Min 2 years’ experience in the same or a similar role
- 5+ years restaurant experience
- Diploma, Certificate or Degree in Culinary Arts, or equivalent preferred
- Resistant to stress;
- Good judgment;
- Meticulous with an attention to detail;
- Creative;
- Commitment to cleanliness and respect for standards of hygiene;
- Good communication skills, interpersonal flexibility, listening skills;
- Adaptability
