**POSITION TITLE**:Pastry Chef

**DEPARTMENT**:Kitchen

**REPORTS TO**:Executive Chef

**POSITION PURPOSE**:
Our pastry chef will understand the pulse of current culinary pastry trends. We provide full-service restaurants and catering facilities to deliver an upscale, unique and casual atmosphere. The team is hip, forward thinking and energetic. Our restaurants are a favorite with Caledon residents and tourists alike. The pastry chef supports the Executive Chef in providing excellent service and quality.

**Pastry Chef Duties & Responsibilities**
- Assists the Executive Chef with menu development related to pastry
- Prepare a wide variety of goods such as cakes, cookies, pies, bread following traditional and modern recipes
- Decorate pastries using different icings, toppings to ensure the presentation will be beautiful and exciting.
- Monitor stocks for baking ingredients such as flour, sugar and make appropriate orders within budget.
- Preparing and cooking sufficient desert to provide the agreed amount of customer choice with minimum wastage.
- To ensure all desserts sent out is correctly garnished.
- To ensure portion control, preparation and storage methods avoid wastage and keep down costs.
- To ensure the pastry and service area are clean, tidy and attractive during service.
- To ensure that the staff that are working under your direction get adequate training.
- There is sufficient mise
- en place during busy Periods.

**Pastry Chef Qualifications**
- Certifications for Pastry Chef
- Education for Pastry Chef
- Degree in Culinary, Culinary Arts, Hotel and Restaurant Management, Education, Culinary School,
- Pastry Arts

**Skills for Pastry Chef**
- Sugar work/chocolate skills an asset
- Measures and various baking and preparation techniques
- Safety and sanitation procedures
- Mixers & Small wares equipment
- Current food trends with American and European Pastries
- Highly organized to be able to focus on what matters
- Chef apprenticeship with diploma
- Minimum of 5 years experience in pastry kitchen
- Sound knowledge of all sectors in a hotel kitchen operation
