Toronto, Canada Blue Collar Bakery Full time

The Production Manager is responsible for all day to day operations related to baking, managing and training the bakers, pastry chefs, and bakery BOH team and creating a vibrant culture and a healthy team setting.

The PM oversees costing, technical execution and ordering related to bakery items/ products/menu, is responsible for portion and inventory control, and produces baked items for all clients/accounts. The PM reports to the COO and Executive Chef.

Must have weekend and flexible availability

Duties/Responsibilities:

- Responsible for effectively managing and guiding a team to achieve company objectives
- Train and educate the team on Blue Collar Bakery’s process and procedures, communicating information and any changes to the team
- Manage quantities to be baked
- Maintaining stock levels on hand for production
- Keeping waste to a minimum
- Participate in setting the menu for baked offerings, keeping a balance of maintaining/innovating baked offerings, trying new recipes and tweaking as needed
- Cost out offerings to ensure margins are correct
- Follow other bakeries to remain current on popular items/ideas
- Execute large custom and/or wholesale orders
- Manage the schedule for the team within labour percentage targets
- Manage schedule for the team, for optimal productivity
- Maintain inventory for baking related ingredients and order as needed
- Maintain Quality and Consistency of production/menu items
- Assess what needs accomplished, then prioritize and delegate
- Keep the team motivated and working, checking for quality and thoroughness
- Monitor equipment operation and report any maintenance needs
- Oversee the work of junior bakers, ensuring that they are preparing high-quality products and complying with all safety and sanitation protocolsSet a positive tone and strong work ethic, leading by example

To be successful in this role, the PM should have proven excellence in the following skilled areas:

- 2 years experience in a similar role
- Self-starting, proactive, initiative driven
- Leadership adherence to company standards and values
- Time management of self and team
- Organization of self and team
- Written and verbal communication
- Accurate reporting and record keeping
- Basic, sound knowledge of Employment Law
- Basic sound knowledge of company financials
- Customer service skills
- Sound knowledge of baking techniques and current industry trends
- Sound knowledge of ingredients, food costing and recipe creation procedures

Pay: $65,000.00-$70,000.00 per year
