**Job description**: Reports to the Lead Cook, the Prep Cook is an integral member of the Food Services Team. The prep cook is responsible to assist the Lead Cook in preparing various food items, filling in for the cook; ensuring the appropriate use of food supplies, perform cleaning duties, participating in the training of students, relieving staff in other food areas, and performing other related duties as required.

**Accountabilities**:

- Performs all food services duties in a manner that meets or exceeds Food Safe, OH&S, Canada Food Guideline and Edmonton Centre of Hope standards.
- Preparation and pre-preparation of food items required for resident meals, example: salads, salad dressings, vegetables, fruit plates, desserts required for residents, catering functions and community programs.
- Follows standardized recipes and approved procedures for washing, trimming, chopping, assembling, and portioning food.
- Performs duties that require simple baking and cooking procedures for items such as muffins, puddings, custards, simple desserts, rice and pasta.
- Adheres to procedures for the preparation and storage of food supplies.
- Reports any spoiled or defective food supplies immediately to the Lead Cook.
- Makes appropriate use of overproduced items within its lifespan.
- Assists in maintaining stock room inventory levels to ensure records are accurate and updated
- Operates all food services equipment according to instructions and safety standards.
- Performs all cleaning duties and ensure that Food Services area (storage, kitchen, dining room) are clean, orderly, and meet expected standards.
- Ensure that all food service facilities and equipment are maintained according to the Edmonton Centre of Hope standards. Any deficiencies should be recorded and reported to Lead Cooks for follow up.
- Assists in training and orientation of new staff, interns, NAIT and work experience students.
- Participates in team meetings.
- Performs lifting tasks as required up to a maximum of 23 kilos or 50 lbs using the proper lifting procedures.
- Performs other related duties as required.

**Qualifications and Education requirements**:

**Education/Certifications**:

- High School Diploma/GED
- Certificate in culinary skills an added advantage
- Food Safe Handling Certificate
- Clear Criminal Record Check with Vulnerable Sector Check

**Experience**:

- Minimum 1-year experience in an institutional or commercial kitchen.
- Strong knowledge of proper food handling procedures, health, and safety standards.
- Knowledge of food preparation, quantity of food to prepare to minimize wastage and sanitation procedures

**Required Skills/Knowledge**:

- Must have good communication skills and be able to work in a team setting in a busy kitchen atmosphere.
- Able to work in a fast-paced environment.
- Effective organizational, planning and time management skills
- Reliability and punctuality are essential
- Able to observe all safety precautions and safe work practices.
- Able to work as relief cook when called upon
- The ability to work within the mandate of The Salvation Army Mission Statement, exemplifying Christian standards of conduct.
- All Food Services Workers are required to wear close-toed, non-skid shoes
