As the Quality Assurance Technician, you will be responsible for the safety and quality of products manufactured on-site to agreed quality specifications and standards and delivery of agreed departmental agreement with the airlines. The role is responsible for driving a culture of Food Safety and Quality Assurance across all departments and with all external customers. In this role, you will participate in customer audits and be responsible for implementation of processes that drive improvement and compliance to the Food Safety and Quality standards.
- Oversight of all food safety HACCP documentation records to ensure correctly completed and filed appropriately. Manage any issues of incorrect / non-completion to avoid repeat occurrences.
- Verify all HACCP documentation is completed by chefs, assembly clerks, and receivers.
- Conduct monthly Internal Audit of facility and present results to Senior Management.
- Support with External Customer Audits.
- Implement an internal quality system in the Hot Kitchen and verify the operational activities comply with company, customer, and regulatory standards.
- Perform on the job training (New / Refresher) for all food safety critical activities (CCPs, OPRPs).
- Lead Root Cause Analysis and Root Cause Corrective Action activities when relevant.
- Ensure planned quality KPI’s are met or exceeded, and internal stakeholders receive reports in a timely manner.
- Conduct weight checks of products against airline specifications.
- Monthly menu changes readiness including specification readiness along with support on the shop floor ensuring a smooth start-up.
- Verify calibration of thermometers used in production and receiving in accordance with the HACCP plan.
- Verify all production room and cooler temperatures on monitoring log.
- Monitor the dish room to ensure the proper chemical concentration and sanitizer usage.
- Work with Sanitation Team to ensure proper cleanliness and sanitation operations are conducted in the Hot Kitchen.
- Verify the calibration of scales on the production room floor in accordance with procedures.
- Perform weekly swabbing procedures including ATP, Allergen and Environmental swabs.
- Assist in integrating good food handling procedures and HACCP requirements into production’s daily routine.
- Responsible for conducting label review to assure ingredients of all products are correct.
- Work with airline account managers to conduct monthly Chefs Table exercises.
- Conduct Product Tests and Assessment on food products received either from external suppliers or our internal Hot Kitchen.
- Review product specifications to ensure that they are accurate and being followed.
- Crosscheck recipes, yields and temperatures to ensure they are accurately represented.
- Provide feedback to appropriate departments including QA Manager and Executive Chef.
- Liaising with the Health and Safety department on any issues.
Work Experience
- Degree in Food Science or Biology or a minimum of 1 years’ experience in food industry.
- Food production knowledge.
- Prior experience with HACCP requirements

- Excellent organisational skills with a strong attention to detail.
- Must always demonstrate integrity, confidentiality, and professionalism.
- Ability to work efficiently using own initiative to resolve issues.
- Ability to build relations and manage diverse teams.
- Effective verbal and written communication skills in English; able to communicate at all levels.
- PC literate with good working knowledge of Microsoft Applications (Outlook, Word, Excel)
- Ability to work under pressure and to tight timescales, prioritising as appropriate.
