We are seeking a red seal executive chef for our kitchen in Southport, MB.
**Responsibilities**:
- Ensure culinary production
- Ensure standards and techniques are in place for preparation, production, presentation, and service standards
- Create comprehensive prep lists, update recipe books, and standardize prep
- Implement par levels that ensure we have enough stock on hand
- Implement cleaning standards and maintain overall cleanliness of the kitchen
- Ensure culinary offerings are being prepared to standard
- Train cooks to execute dishes properly and consistently
- Train and manage the kitchen employees to use best practice food production techniques
- Coach employees by creating a shared understanding about what needs to be achieved and how it is to be achieved
- Plan and execute team meetings and daily huddles
- Complete and maintain all staff records including training records, shift opening/closing checklists and performance data
- Inventory control
- Ensure proper equipment operation and maintenance

**Qualifications**
- Must have Red Seal Cook Certification
- Current Safe Food Handlers or willing to get one
- 4-5 years of experience leading a culinary team of 7 or more people, in a dynamic, fast-paced, high-volume environment
- Skilled business sense regarding inventory management, food cost, labour, and scheduling
- Strong understanding of leadership. What inspires a team to produce desirable results
- Excellent communication skills.
