**Job purpose**

To transform ingredients into a cohesive, extensible, machinable dough that can be sheeted or laminated into a continuous sheet prior to cutting.

**Duties and Responsibilities**

The associate’s primary functions and responsibilities are as follows:

- Operate mixing equipment
- Communicate any issues with supervisor.
- Follow dough formulation and adds ingredients as specified.
- Follow FIFO and communicate with the line supervisor and shipping for ingredient needs.
- Conduct scaling and loading of ingredients into mixers and ingredient bins.
- Handle Re-work dough.
- Control and communicate dough rest time via batch time report.
- Monitor dough temperature.
- Delivery dough to sheeter dough hoist
- Update enzyme board
- Ensure mixing room and ingredient storage area are maintained in a clean, sanitary, and orderly state always.
- Follow SOP’s including daily pre-op procedures and formulas, record keeping.
- Perform other assigned duties.
- Follow Health and Safety rules and regulations.
- Must follow Good Manufacturing Practices, Food Safety, and Food Defense guidelines.
- Comply with all Company policies and procedures.

**Working conditions**
- Work indoors.
- May be exposed to hot temperatures from ovens.
- May work close to others, usually within a few feet.
- Compliant with ventilation, cleanliness, space, lighting, and temperature.

**Physical requirements**
- Standing involved.
- May repeat the same movement.
- Often wear safety equipment such as gloves, hair nets, steel toed safety shoes/boots and beard nets.
- Ability to bend or twist their body.
- Must be able to lift up to 50lbs.
