**The Position**
The Kitchen Cook is tasked with ensuring culinary excellence by assisting with food preparation, cooking, and packaging of meals for NCCT’s Monday-Friday community lunches, catering orders, Thursday socials, and special events. The Kitchen Cook provides a positive, respectable work culture for everyone and holds a high standard in meeting food quality, food handling regulations, and overall cleanliness of the kitchen.
**Duties and Responsibilities**
- Complete all preparatory tasks assigned by the Kitchen Chef at each stage of meal preparations;
- Prepare food by operating a variety of kitchen equipment, measuring/mixing ingredients, washing, peeling, cutting, and shredding fruits/vegetables, trimming and cutting meat, poultry, or fish;
- Follow recipes and/or directions for preparing, seasoning, cooking, tasting, carving, and serving soups, meats, vegetables, desserts, and other food;
- Assist the Chef in developing a culinary plan/menu for Monday-Friday community lunches that ensure quality satisfaction and meets Canada’s dietary guidelines;
- Assist the Chef in developing and maintaining traditional Indigenous and seasonal menus for monthly and/or annual occasions;
- Build relationships with NCCT clients and listen to their feedback to help improve our culinary offerings and services;
- Assist in the packaging, date stamping, delivery, and tracking of meals and catering orders;
- Assist in kitchen set up and clean up before and after each cooking shift;
- Aid in assuring that client’s dietary considerations are being met and changes are being recorded;
- Adhere to sanitation practice standards and current legislated health guidelines;
- Ensure maintenance of food rotation in storage to minimize spoilage and waste;
- Work in tandem with the kitchen guidelines and protocols set by the Kitchen Chef;
- Inspect work areas, supplies, ingredients, and cooking equipment to ensure constant conformance to regulatory standards;
- Other related duties as may be assigned.
**Qualifications**:
- Current and valid Food Handler Certificate.
- Three (3) or more years of experience in food preparation and cooking in a commercial kitchen.
- Knowledge of using large-scale kitchen equipment and general kitchen safety.
- Exceptional verbal communication skills.
- Proficiency in a wide variety of preparation methods such as roasting, grilling, steaming, poaching, boiling, and baking.
- Demonstrated leadership skills including the ability to contribute to the creation of positive team and workplace dynamics.
- Demonstrated empathy, approachability, and an understanding of others.
- Successful community experience working with both Indigenous and diverse populations.
- Demonstrated ability to earn and maintain trust and show discretion at all times.
- Knowledge and ability to work with standard operating programs (i.e, word, excel).
- Ability to write and communicate clearly and effectively.
- Well organized and able to streamline, prioritize, and manage multiple tasks effectively.
**Knowledge/Skills/Abilities**:
- Working in a manner that preserves confidentiality and seeks to minimize risk;
- Experience working within an Indigenous organization or with the Aboriginal community an asset;
- Knowledge of Indigenous Languages and Culture represented in NCCT community;
- Ensures the NCCT response is consistent with current local, provincial, and federal health guidelines and orders;
- Commitment to learn and use an Indigenous Language reflective of NCCT community;
- Ensure practices and procedures exist to maintain the confidential storage and security of all staff files and other related information;
- Must be legally entitled to work in Canada in accordance with relevant provincial or territorial legislation and regulations;
- Contributing to the centre’s activities to collect, analyze, and report on data and relevant information, and participate in research;
