Scanway is seeking a dynamic leader for the Food & Beverage Department.

**The Executive Chef **manages the overall culinary direction for our food service operations within Best Western hotel. **The Executive Chef** is savvy with current food trends, has the passion for working hands-on, as well as managing the overall menu development, international food stations, people resources, cost controls, QA, H&S and catering operations. **The Executive Chef** has proven experience in back of the house operations regarding product quality, food costs, sanitation, inventory control, staffing and training. The position reports to the General Manager. We are looking for individuals who have strong leadership and interpersonal skills, are able to prioritize and adapt to the changing needs of the operation, and have a solid work ethic, good business acumen and a passion for service.

**Now, If You Were to Come On board as Our Executive Chef, We’d Ask You to Do the Following for Us**
- Manage all phases of food preparation, menu planning and development, operational planning and expenditures, budgeting, costing and maintaining proper inventory levels (FIFO).
- Promote sustainable operations and initiatives, front and back of house.
- Provide visible leadership, and ongoing mentoring and coaching of back of house staff.
- Work in partnership with our client and the General Manager to ensure relationships are maintained and that the client is satisfied with the service and menu options provided
- Demonstrate creativity with menus, knowledge of the newest trends/cutting-edge cooking while following Healthy Eating Guidelines
- Upkeep and maintenance of all kitchen equipment. Initiate purchase requests for kitchen equipment and submit annual Capital Expense requests for new equipment.
- Ensure timely completion of all administrative duties as needed to include: schedule preparation, attendance records, food and supplies inventory, purchasing and maintenance of accurate par sheets.
- Work with Event Manager and General Manager in planning, scheduling and implementation of new menus for all houses including product pricing, product “specs,” cook training and suggested presentations
- Experience with computerized food ordering systems, plus demonstrated competence with Word and Excel software.

- Minimum five years of senior Sous Chef or 3 years of Executive Chef experience with a strong banquet catering background and three years of leadership experience; plus, Red Seal designation or equivalent experience.
- You have great experience managing high-volume catering projects and the ability to prepare a large quantity of meals, daily, by yourself (when required).
- Passionate about quality and customer service. Very detail-oriented individual and a strong team player.
- Valid Nova Scotia driver’s license.
- Provide visible leadership, and ongoing mentoring and coaching of back of house staff.
- Be accountable for staffing, scheduling and performing general administrative duties.
- Great time management, organizational and administrative skills.
- Strong motivator, mentor and leader.
- Detail-oriented and a strong team player.
- Flexible availability to work weekdays (days or afternoon shifts) and weekends.

**Job Types**: Full-time, Permanent

**Salary**: $50,000.00-$55,000.00 per year

**Experience**:

- sous chef: 5 years (preferred)
