Your menus will shape stories, elevate experiences, and set the standard for modern mountain cuisine.You get to set the culinary identity for one of the most visited attractions in the country. Your food must match that reputation. You’ll mentor emerging talent, experiment boldly, elevate dishes, and push boundaries. You will drive hospitality excellence, craft menu storytelling that reflects mountaintop dining and local ingredients and actively create and participate in seasonal festivals, balancing volume and advanced quality. This is a role where you don’t just cook, shape culture, develop people, and define what mountain dining can be in Banff and beyond.RESPONSIBILTIES (including but not limited to)Management Continually evaluate the food program processes; proactively taking action to capitalize on opportunities for growth efficacy and quality, using pricing analysis and feedbackExecute a progressive, inspired, and consistent product that differentiates Banff Gondola Restaurants from its competitorsAssist in developing concepts of service, policies, procedures, and menus for food outlets and banquetsWrite menus and recommendations to the BJC Executive Chef for future months, holidays, special events and promotionsSupport preparation, recommendation, and implementation of departmental monthly and annual budget forecasts, monitoring the progress of each period and throughout the yearAssist in the development and implementation of short- and long-term goals and related F&B strategies and programsIdentify, research, develop, and implement policies and procedures related to food preparationSupervision Supervise the training and cross training of kitchen staff across all levels of food preparationLead scheduling, task delegation, and adaptation to business volume and needsInterview and hire employees, conduct performance reviews and disciplinary actionsBuild relationships with other departments to ensure communication and effective problem resolutionReport, manage, and see to completion all maintenance and repair needs with Maintenance and Operations teamsFood Preparation Supervise, expedite and participate in food preparation for restaurants and banquets, in accordance with standards of quality, quantity, taste and presentation Assist in the development of food specificationsConduct and develop portion control tests for yield and quantityEnforce proper sanitation practices to prevent food spoilage and contamination.Inspect the delivery of food to ensure qualitySupervise the creation of attractive food displays, including Grab and GoVerify taste, temperature, and visual appeal of all foodCoordinate HACCP Program with all Sous Chefs and Supervisors ensuring HACCP logs are accurately filedMonitor, report, and action-plan all waste reduction opportunitiesAdministration Attend and conduct Sous Chef and Supervisor meetings to ensure coordination of activities, and review of policies and proceduresMeet with other departments and clients to plan and coordinate food and beverage functionsEnsure compliance with departmental policies, rules, and regulationsReview and approve food requisitions, inter-kitchen transfers and production quantitiesMaintain cost control procedures by reviewing labor and supply costsPrepare the monthly labor and revenue forecastsManage food cost and monthly inventory countsReview labor projection tracker dailyOther Responsibilities Comply with the Pursuits policies and proceduresPerform other tasks as assigned by managementREQUIRED SKILLS & QUALIFICATIONS Red Seal Certification or EquivalentAdvanced Food Safety Training is considered an assetMinimum 7+ years of industry & culinary management experience in high-volume food service and restaurant operationsMulti-venue and High-Volume ExperienceAbility to manage in a diverse environment with focus on guest serviceExperienced and proficient in the latest sanitation and HACCP standardsUnderstanding of cost controls - food & labor  P&L accountability and/or contract-managed service experience is desirable  Understanding, support and development of sustainable cuisine   Experience in menu writing and analysis comprehension Computer literacy including word processing and presentation software  People management and culinary leadership experience   Commitment to staff development and training   Strong verbal and written communication skills Elevate modern mountain cuisine, inspire a passionate culinary team, and craft unforgettable dining moments with the most iconic view in the Rockies. About Us:We're more than a hospitality and attractions company.
