OverviewWe are looking for a Sous Chef to join our team. This role is based at the Pomeroy Inn & Suites in Olds, Alberta.Job DescriptionAs the Sous Chef, you are authorized to support a team of culinary professionals in creating inspired and memorable dining experiences for our guests. You will achieve this by executing a culinary program that matches the brand experience, ensuring quality is delivered every time and making business decisions that uphold the highest standards in guest service while delivering against key financial goals and performance metrics.Key FocusesMaintain a friendly, attentive, and professional demeanor during all guest encounters and respond appropriately to guest requests and complaints.Understand that effective and cohesive communication between departments is vital to the hotel’s operation.Oversee day-to-day kitchen operations, ensuring that food preparation, cooking, and plating are carried out efficiently and in accordance with established recipes and standards.Ensure consistency in the preparation of all food items for a la carte and/or buffet menus according to hotel recipes and standards.Enforce strict adherence to health and safety regulations, sanitation guidelines, and food handling procedures. Conduct regular inspections to maintain a clean and safe environment.Follow kitchen policies, procedures and service standards and give direction to the culinary team.Maintain full knowledge of all menu items, daily features and promotions. Manage quality standards from creation to table service.Ensure proper labeling of food and rotation to maintain freshness and compliance with standards. Check and maintain equipment to ensure proper temperatures for fridges, coolers, fryers, and freezers.Supervise the activities of the culinary team and provide coaching and feedback as needed. Train staff in preparation, cooking and handling of food.Provide leadership and support to the culinary team, including training, mentoring, and coaching.Recognize strengths in peers and share technical knowledge to improve team skills; contribute to team meetings to improve processes and service standards.Strive for excellence in service delivery; evaluate the status quo and recommend improvements; find creative solutions to operational challenges.Position the department as a centre of excellence and share best practices with peers across the business.Experience / EducationTwo years of culinary experience with strong supervisory skills capable of motivating and developing associates1 to 2 years of leadership experience in the culinary field requiredPrevious tenure as Sous Chef in a hotel property is an assetProficient with ExcelExperience using costing/inventory softwareJourneyman's papers or international equivalent requiredValid Foodsafe certification or advanced (Level 2) Food Safety certification is preferredDiploma Certification in Culinary discipline is an assetWorking ConditionsThis position may involve long days and/or weekends to meet periodic business demands.
