SUMMARY:


The Royal Canadian Yacht Club was founded in Toronto in 1852 to serve both as a yachting recreational club and an unofficial auxiliary of the Royal Navy in the defense of the waters of Lake Ontario.

We are one of Canada's premier sailing, sports and social clubs, The RCYC operates year-round from two facilities: our Island Clubhouse on the Toronto Islands and our City Clubhouse in downtown Toronto.

With over 4300 Members, we offer extensive services in Food and Beverage along with Fitness, Sports and Sailing facilities.

The Pastry Chef De Partie manages all aspects of a la carte desserts and Banquet production.

The incumbent's duties include, but are not limited to:

ordering all Food and Beverage materials, keeping food costs in line with Executive Chef's standards, managing labour costs for culinary staff, ensuring quality food product, and meeting Member satisfaction standards.


DUTIES

  • Report to and receive functional direction from the Executive Sous Chef and Dining Room Sous-Chef
  • Maintain internal/external contact with Members, vendors, Management and staff
  • Primarily responsible for a la carte desserts and Banquet production
  • Able to work in all areas including: Bistro, Banquets, and Dining Room
  • Ensure that all par stocks are being kept securely and to the specified conditions
  • Maintain current knowledge of food ingredients and food preparation in order to provide Members with accurate information
  • Ensure that any anticipated shortages are communicated promptly to the Executive Chef or Sous-Chefs
  • Attend weekly departmental meeting
  • Perform other tasks as assigned by Executive Sous Chef, Sous-Chefs and Management

QUALIFICATIONS:

  • Postsecondary education, certification or 2 years of equivalent work experience
  • Minimum of 2 years' experience in a fastpaced Bistro or high volume Banquet operation
  • Chef de Partie skills are an essential requirement
  • Perform well under pressure
  • Ability to work independently with mínimal supervision and in a team
  • Excellent organizational and time management skills
  • Ability to stand for long periods of time
  • Ability to lift up to 50 pounds
  • Attend department meetings and participate in training as required
