Executive Chef Melissa Craig, known for her award-winning tenure at Whistler's Bearfoot Bistro, has returned to her culinary roots at Sooke Harbour House.

Alongside her is hospitality visionary Andre Saint-Jacques, assuming the role of Managing Partner, renowned for creating extraordinary guest experiences.

Job Description:
Chef de cuisine


We are currently in search of a skilled and motivated Chef de cuisine to become part of our team at Sooke Harbour House.

This individual oversees the evening brigade and assists the Sous Chef with overseeing the morning and afternoon brigade as well.

They make sure the kitchen and team are running efficiently, productively, and up to the chef standards.

The Chef de Cuisine is also in charge of assisting the chef with the creation of the seasonal Dinner and Chef Tasting Menus which interchange throughout the season.

The Chef de Cuisine would also step in and cover for the Executive Chef when said individual is absent from the kitchen.

Taking over all responsibilities and day to day tasks while the Executive Chef is away.

Responsibilities:

  • Covering for the Executive Chef while they are absent.
  • Making sure staff are maintaining their workstations to the chef's standards.
  • Making sure all daily and weekly cleaning tasks are completed and up to standards.
  • In charge and oversees the morning and evening team while controlling and running both breakfast and lunch services
  • Promote teamwork and communicate well with the other cooks to ensure the chef's high levels of quality are being upheld.
  • Lead the team of cooks/dishwashers in the cleaning and scrubbing of the entire kitchen at the end of their service.
  • Implementing and responsible for ordering of specialty and regular products.
  • When Executive Chef is absent from the kitchen, said individual is in charge and takes upon said roles and responsibilities.

Requirements:

  • Previous 10 + years of fine dining kitchen management experience is required.
  • Exceptional organizational and timemanagement proficiencies.
  • Strong communication and interpersonal skills.
  • Ability to thrive under pressure and manage multiple tasks concurrently.
  • Meticulous attention to detail and a dedication to delivering toptier service.
