What can I expect to do in this role?: As the Food Services Manager, you will:

  • Plan, supervise and coordinate food preparation, production and delivery for the institution.
  • Oversee ordering requirements, maintain inventories of food supplies, and authorize payment of monthly billings.
  • Plan and post weekly menus using a computerized food services software.
  • Establish and implement effective and efficient food preparation and production methods.
  • Inspect kitchen, dishwashing, and distribution areas to ensure cleanliness and a pestfree environment.
  • Conduct inspections of equipment to ensure proper and safe operation, storage, waste management, and compliance with Public Health standards.
  • Prepare and assume responsibility for the food services operating budget.
  • Provide supervision, direction and training to staff and inmate helpers.
  • Maintain data and records of meals served, including number and types of special diets/meals ordered and provided, and daily usage and losses.

  • You have knowledge of food services management, including cooking and preparation methods and procedures, cost control, menu planning principles, restricted diet and basic nutrition, meat preparation, and equipment operation and care
