Description:

The Sommelier is responsible for understanding the needs of the business on a daily basis

and responding to those needs in a timely manner.

Maintaining full stock levels of all storage areas and customer-facing areas.

These areas include:

Third floor:

  • Storage cages
  • White wine fridge
  • Cellar
  • BTB bar fridges

Second floor:

  • Red wine fridge
  • BTB bar fridges

Grocer:

  • Bottle shop shelves
  • Chiller
  • High top rounds
  • BTG wine cake stand

P1:

  • Restocking and filling receivables in this storage room
  • General maintenance keeping this area clean and accessible

On the restaurant floor:

  • The Sommelier will participate in wine service to guests directly by making
- recommendations, being available on the restaurant floor and following the hospitality and
- sommelier service standards in an elevated casual dining environment.

  • Retrieving BTB wines for the service staff in a timely manner.
  • Mastery of all wine locations is pertinent.
  • The Sommelier will assist with the POS maintenance, report any discrepancies on the
  • BTG & BTB wine list, and assist to rectify the advertised price on the POS for the customers.
  • You will be responsible for reporting and red dotting any 86'd/sold out wine items, deactivating
  • Them from the POS, and informing the service team using the POS communication system.
