Overview

This position is responsible for efficiently managing the manual deboning workstation, executing specific functions such as manual deboning of chicken using tools like the boning knife and filleting knife. The role involves separating bones and chicken into designated bins and ensuring compliance with food safety and quality standards.

Reports to: Lead Hand

  • Education: High School Diploma.
  • Experience:
  • 1 year or more experience as meat cutter or butcher.
  • Previous experience in the raw meat processing industry is an asset.
  • Skills:
    • GMP and/or Food Handling training is advantageous.
    • Knowledge of HACCP principles is preferred.
    • Proficient in safely and effectively using a deboning knife.
    • Ability to recognize and understand poultry parts (Chicken Legs – left or right).
    • Intermediate proficiency in Word and Excel.
    • Capacity to work independently and complete daily activities.
    • Ability to lift 50 lbs. and work in cold conditions.
    • Positive attitude with a willingness to learn.
    • Exceptional attention to detail, specifically in recognizing chicken bones.
    • Safe use of tools, particularly knives.
    • Excellent hand-eye coordination and decision-making skills.
  • Responsibilities:
  • Bring «In Process» chicken quantities in, adhering to FIFO principles.
  • Manual deboning of chicken bones using knives, leaving a «meat-only» product.
  • Accurately matching each item (Supplier, Date of Slaughter, etc.) to the corresponding label.
  • Check and inspect boneless chicken output for absence of bones, skin, or foreign materials.
  • Maintain Food Quality, GMPs, health, and safety regulations.
  • Record activities in logs with proper data.
  • Perform closing duties, clearing the line of remaining chicken, bins, and skids.
  • Undertake ad-hoc tasks related to production.
  • Terms of employment:
    • 40hrs per week.
  • Working Conditions:
    • Shift rotations occur every 2 hours with responsibilities including separating chicken legs, deboning, quality checking, marinating, packaging, stacking, wrapping skids, chopping meat, grinding veggies, and maintaining cleanliness.
    • Environment with a strong smell of raw poultry and meat.
    • Working in various cold temperatures (approximately 6 Degrees).
    • A physically demanding position requiring continuous standing and some heavy lifting
