Job Summary:
The Butcher/Portion Cutter is responsible for cutting, trimming, deboning, and portioning chicken and beef products according to company specifications and customer requirements. This position ensures all products meet quality, yield, and food safety standards while maintaining a clean and safe work environment.
Key Responsibilities:
- Cutting & Portioning: Accurately cut, trim, and portion chicken and beef according to specific weight, size, and customer specifications.
- Processing: Debone, grind, and prepare meat for packaging or further processing.
- Quality Control: Inspect meat for quality, freshness, and appearance before and after cutting.
- Equipment Operation: Safely operate knives, saws, slicers, and other cutting tools and machinery.
- Food Safety & Sanitation: Follow HACCP and company food safety guidelines, including cleaning tools and work areas to maintain hygiene standards.
- Inventory & Documentation: Record production data such as weights, quantities, and yields as required.
- Teamwork: Work collaboratively with other production staff to ensure daily targets and orders are completed on time.
- Health & Safety: Comply with all occupational health and safety policies and report any hazards or incidents immediately.
Qualifications & Skills:
- Previous experience as a butcher, meat cutter, or portion cutter, preferably in poultry and beef processing.
- Knowledge of meat cutting techniques, yields, and portion control.
- Ability to use knives and cutting equipment safely and efficiently.
- Understanding of food safety regulations and HACCP principles.
- Physically fit; able to stand for long periods and handle repetitive motions.
- Basic math and measurement skills for portioning accuracy.
- Good communication and teamwork skills.
Working Conditions:
- Cold environment (refrigerated processing area).
- Requires handling raw meat and working with sharp tools.
- May require early morning or shift work depending on production schedule.
Physical Requirements:
- Ability to lift up to 70lbs.
- Ability to work in a cold environment (-10/+4 degrees).
- Ability to stand for extended periods.
- Frequent standing, bending, and repetitive motion.
