職位簡介

該職位直接匯報給總廚 (或其授權人) , 主要負責協助總廚在指定分店或中央廚房做食材的準備工作,包括但不限於斬、切、醃製及削皮等等。他/她還負責進貨品質數量檢查,貨品搬運及儲放並且負責維持廚房器具的清潔,包括工具、容器、抹布、擦拭布、工作場所及食物儲存區等。

主要工作職責:


  2. 負責保存食材,包括進貨
  3. 負責各項食材烹煮前的準備,包括切菜,切肉,清洗海鮮等等
  4. 確保收貨的正確,並且將食材適當及妥善的儲存
  5. 負責自己所屬的工作所,在交班前後確保所有用具的清潔,可隨時再度使用 
  6. 確保產品按照食譜的規範要求及數量來生產, 確保食品的質量和數量符合所有規定的標準作業規定來進行
  7. 確保廚房的整潔及衛生要求符合主廚及食品安全的需要
  8. 確保控制貨品品質,食品安全,新鮮度,及部門內嚴格執行'先進先出'原則
  9. 確保食材正確儲存並且在任何時候皆需將所有溫度正確記錄
  10. 負責清潔,衛生,設備和工具的維護,確保垃圾、可回收材料及其他廢料及時且妥善處理

  5. 出勤紀錄良好,遵守公司規章制度

職位要求:


  2. 具備廚食製作(如: 燒臘、熱食、點心、壽司及其他廚食製成品或半製成品)的知識和經驗
  3. 1-3年及以上相關工作經驗
  4. 了解工作環境下的健康安全知識和食品安全 (首選具有FoodSafe認證)
  5. 良好溝通能力,能以中(國語/粵語) ,簡單英文溝通
  6. 需輪班工作, 包括平日、週末、節假日、早上和晚上時段
