Job Description

The Ramen Cook works to prepare consistent, high-quality ramen, broth, and related side dishes. This role focuses on ensuring the highest standards of food service, presentation, and quality are met, ensuring every dish meets our high standards. This role focuses on mastering specific ramen station tasks, including, but not limited to:

  • Correctly boiling and straining noodles to the perfect firmness (katasa).
  • Maintaining and seasoning the broth to the required temperature and flavor profiles.
  • Precise and appealing plating of all chasu, ajitsuke tamago, and other toppings for consistent presentation.

The Ramen Cook works under the supervision of the Sous Chef and Resort Chefs, or designates, and closely with all culinary and warehousing departments at Sunshine.

Job Functions

Prepare and cook a wide variety of foods, including:

  • Prepare and cook individual dishes and foods
  • Oversee kitchen operations
  • set up, cleaning, and organization of work areas
  • Ensuring that all food service standards, health and safety regulations, and quality controls are followed consistently and thoroughly
  • Able to be hands on in food preparation and serving, when needed

Administrative and Reporting Responsibilities

  • Assisting with the training of kitchen staff, including completing documentation
  • Timely and accurate incident and deficiencies reporting.
  • May assist with menu planning, food portions, estimates of requirements and costs.
  • Assisting with monitoring and ordering supplies.

Qualifications

  • Experience as a cook in a fast-paced food service
  • Food handling certification is required. Candidates must provide proof of valid certification upon hiring or complete an employer-provided course to meet this requirement.
  • Strong communication & organization skills
  • Outgoing, positive, friendly attitude.
  • Calm under pressure and patient, able to exercise good decision making.
  • Communicate effectively in English, both written and verbally.
  • Prepared to work flexible schedules (weekends, holidays)
  • Maintain professional conduct when in uniform, on or off-duty, and online.
  • Effectively provide support, and assistance to coworkers.
  • Attend and actively participate in meetings and training.
  • Must be neat, punctual, and dependable.

Additional Considerations

  • This position may require working in various Food & Beverage venues across the resort, based on operational needs.
  • Employees must always be of sound mind, exhibit good judgment, and report to work fit for duty.
  • This position works at high altitude and at times, in inclement weather. Prolonged periods of standing, repetitive motions, bending and twisting is required.
  • Some required uniform pieces are provided.

This role is subject to all terms and conditions of the Sunshine Village Employee Handbook and Policy Manual, and the Alberta Employment Standards Code.
