Ristorante Verdicchio is one of Sudbury's premier Italian fine dining destinations. We are dedicated to authentic flavours, exceptional quality, and an elevated guest experience. Our busy kitchen includes a dedicated production team responsible for creating the foundational sauces, pastas, and components that make our service possible. We are seeking a skilled and dedicated Production Cook to join our professional culinary team.
We are looking for an experienced Production Cook who is passionate about quality and consistency. In this role, you will be responsible for executing large-batch recipes and handling high-volume prep for our fine dining service. The ideal candidate is organized, self-motivated, and thrives in a fast-paced kitchen environment. You will be a crucial part of our back-of-house team, ensuring our line cooks have everything they need to execute flawless dishes.
Responsibilities
- Execute batch recipes for stocks, sauces, soups, and braises with precision and consistency.
- Prepare and portion proteins, vegetables, and other ingredients according to restaurant standards.
- Operate and maintain various kitchen equipment, including ovens, ranges, grills, and mixers.
- Demonstrate excellent knife skills for precise butchery and vegetable prep (e.g., julienne, brunoise, chiffonade).
- Utilize a variety of cooking methods, including roasting, braising, sautéing, and simmering.
- Maintain a clean, organized, and sanitary workstation, adhering to all food safety and health department guidelines.
- Properly label, date, and store all prepped items using the FIFO (First In, First Out) method.
- Manage a daily production list efficiently, working both independently and as part of a team to meet deadlines.
- Assist the culinary team with other prep or line duties as needed.
Qualifications and Requirements
Assets (Preferred Qualifications)
- Knowledge of authentic Italian cuisine, ingredients, and techniques is a significant asset.
- Experience in a fine dining or upscale restaurant.
- Formal culinary education or apprenticeship.
