Job Description: Line Cook
**Reporting to: Head Chef**
The **Line Cook** position at Couchiching Craft Brewing Co. (CCBC) calls for strengths in both culinary knowledge and skill and is a key position in our kitchen brigade.
As part of a manufacturing, hospitality and retail model, the Line Cook must work diligently and closely under the Head Chef and with the Hospitality Team to assist in creating, developing and establishing our company’s food operations in a safe, innovative and sustainable environment.
As part of the kitchen brigade, the Line Cook must respond with flexibility and adaptability to challenges, from equipment and product issues to consumer feedback. As a member of the food and beverage and regional business community, the Line Cook is also expected to adhere to the Mission and Vision Statements of the Brewing Co. in all dealings with vendors and customers.
Overview
- Responsible for prepping, organizing, cooking and cleaning all aspects of the kitchen
- Possess knowledge of kitchen equipment, its operation and maintenance
- Knowledge and experience with preparing cold, fried, grilled, and sautéed foods
- Maintain organization on stations and all BOH storage areas
- Following recipes created by Head Chef and Second
- Maintain excellent hygiene
- Ability to lift 50lbs/heavy pots and kitchen equipment
- Ensure food preparation and storage areas meet and exceed health and safety standards
- Monitor product freshness and rotate out old product
- Ability to work on your feet for 8hrs+/day
- Comfortable working with a small team within a small work environment
- Assist the Head Chef and Second in ordering and monitoring product daily
- Be aware of hazards and maintenance procedures involved with all kitchen equipment
- Maintain positive communication with Front of House during service
- Work flex evenings and weekends, as is a requirement of this position due to the nature of its responsibilities and industry
Qualifications and Experience
- 2-3yrs, with basic kitchen and cooking knowledge with the ambition to learn and further there culinary skills
- Have knowledge of kitchen equipment, how equipment operates and how to maintain it.
- Knowledge of preparing all cold, fried, grilled, and sautéed foods
- Ability to stay organized and maintain organization on stations and all other storage areas
- Following recipes created by Sous Chef and Head Chef
- Maintaining excellent hygiene
- Lifting heavy pots and kitchen equipment
- Make sure food preparation and storage areas meet health and safety standards
- Monitor product freshness and rotate out old product
- Ability to work on your feet for eight hrs or more a day
- Comfortable working with a small team in a small work environment
- Food Handler’s, Class “G” Licence, WHIMIS, First Aid/CPR, Smart Serve and other related training considered an asset
